{Recipe} Roasted Marinated Tofu

 I've featured a few tofu recipes on the blog but I hadn't shared my go-to roasted tofu recipe...until now! 
Have you tried tofu? Maybe you're tofu curious or just want to incorporate more plants and plant proteins into your diet. I think this is an easy (and tasty) way to start.  It's also very economical, coming in at $2-$4 per package. 
Step 1: Get ready to press the tofu. I usually prefer extra firm tofu for this recipe (or I get the super firm tofu from Trader Joe's and can skip the pressing step). I have a handy tofu press but it is not a necessity.  Using some dish towels, two plates and some canned goods does the trick like this.
Step 2: Rinse tofu and squeeze any excess water out of the tofu.

Step 3: Press the tofu in a tofu press or wrapped in a dish towel between 2 plates with some heavy canned goods on top.  I press the tofu for a few hours or up to a few days depending on when I need it. Usually it's just a few hours.
Step 4: Refrigerate. I always keep the pressed tofu in the fridge.
Step 5: Drain & Dry the tofu pressed tofu and prepare to cut into cubes. Drain any excess liquid and discard. Pat the tofu dry with paper towels.

Step 6: Cut tofu into bite sized cubes.


Step 7: Make marinade. I don't have an exact recipe because I always just eyeball the measurements.  
I use approximately 1/4 cup liquid aminos (or soy sauce), a generous spoonful of minced garlic, a generous spoonful of Dijon mustard, a squirt of Sriracha sauce. I sometimes add minced or dry ginger and/or crushed red pepper flakes. You could also add a sweetener here like maple syrup or coconut sugar.   Whisk up the ingredients.  Can be thinned out with a little water (you want to have enough marinade to coat the tofu chunks but they don't have to be covered with marinade).

Step 8: Marinate the tofu chunks.  Gently add a few chunks at a time and toss in the marinade until all have been coated.    
Step 9: Refrigerate in a sealed container.  My tofu press can also be used for marinating so that's what I use but any airtight container will work.  I give it a few shakes to move the marinade around.   The tofu can be marinated for a few hours or longer (up to a few days).  Sometimes I just toss it in the marinade and roast immediately but the added marinating time does help deepen the flavor so it is recommended.
Step 10: Roast the tofu.  Preheat over to 400ºF.  Pour the tofu chunks and all of the marinade onto a parchment lined baking sheet.  You can see the tofu has absorbed most of the marinade.
Step 11: Roast the tofu to crispy goodness!  Roast for 25-45 minutes, stirring the tofu occasionally so all of the sides get crispy and keeping an eye on it. I like it a little extra crispy.  You can enjoy the tofu right then (careful, will be HOT!).  Store in any extra in an airtight container in the fridge. It's good hot or cold.

Roasted tofu can be used in many different ways-salads, wraps, Buddha bowls, spring rolls or right out of the fridge as a snack.
Spinach, tomatoes, bell peppers, tofu and pickled onions topped with everything but the bagel seasoning.

Dinners Lately & Loving My New Instant Pot

I am very late to the Instant Pot game but have finally gotten one.  I didn't think I needed another kitchen appliance, especially after downsizing last year but I made an exception.  I found myself needing a second slow cooker and this beauty from Pioneer Woman was on clearance at Walmart and could do so much more than a slow cooker for about the same price.  It was a return but was still brand new in the box.
Isn't she pretty?  So what have I been making in the Instant Pot?
I started very basic with rice. It cooked up perfectly fluffy in a flash.

For Mr. Click's birthday party I used it as a second slow cooker for New England Clam Chowder along with a baked potato bar.
I also made a delicious batch of macaroni and cheese for another get together.
I made Red Lentil Chili in it and cooked up a batch of dried white beans.   I plan on doing that with all different dried beans. They are so easy in the Instant Pot.

As for dinners lately, I've been on a freezer and pantry clean out and here are some of the dinners we've had.
We had a lot of potatoes left over from Mr. Click's birthday party baked potato bar so I tried a new recipe that I saw on Tiktok (of course).  It was parmesan crusted baked potatoes. Yummy!
I also made a big batch of Potato Corn Chowder for another summer gathering. 
I dug into some of my old recipes to use up what we had for some other meals.

One weekend when City Girl #2 was visiting we went to our favorite Thai restaurant.  
Last night I made the Cannellini Bean, Couscous & Spinach Soup
recipe that I got from Julie.  I added some veggie meatballs that needed to be used up.

{Recipe} Dad's Marinade For Chicken & Tofu (or Beef)*Updated*

I've mentioned this recipe before and thought it wasn't up on the blog but I just realized I made one back in 2015.   I'm giving it a little update now.  I've always called this "Dad's Marinade" but it's actually his dad's recipe and it's actuall called-Barbecue Sauce for Chicken or Beef (and in this case, tofu) I'm not a fan of traditional barbecue sauce and consider this more of a marinade.
Ingredients (for 2 -3 pounds of protein)
Dry Ingredients:
2 TBS flour
2 TBS sugar
1 tsp salt
Liquid Ingredients:
1 cup oil (I use avocado)
3/4 cup red wine vinegar
1/4 cup lemon juice
6 TBS total of the following sauces:( I use 2 TBS of each)
Worcestershire Sauce
Soy Sauce
A-1 Steak Sauce
2 bouillon cubes (I use No-Chicken bouillon)
1/2 tsp Tabasco
1/2 cup wine (optional)
To make:
  • Warm liquid ingredients and sauces in a medium sized sauce pan
  • Sift in dry ingredients
  • Heat, stirring frequently until browned and thickened
  • Add bouillon cubes, tabasco and wine
  • If it needs extending add: {1/2 cup oil, 1/4 cup lemon juice, 1/4 cup wine, 1 TBS A-1 sauce}
  • Let cool before pouring over protein to marinate
  • Marinate for several hours or overnight in a covered dish in the fridge
  • Broil or Grill using marinade to baste
We made this recently when we had visitors and it was such a nice memory of my dad (he always used chicken thighs but we used chicken breast and tofu).
I also made my Strawberry Crunch Cake and it was just as delicious as I remembered!

{Soup Series} Old Fashioned No-Chicken Noodle Soup

I had a craving for some old fashioned chicken noodle soup and created my own version.  It really hit the spot! 


Ingredients:
(4-6 servings)
1/2 onion, diced
1 clove garlic, minced
3 large carrots, chopped
4 stalks celery, diced
1/2 cup frozen corn
2 Don't Be A Chicken Breast Filets (or chicken sub)
1-2 cups raw spinach (optional)
6 cups no-chicken broth (or veggie broth)
8-12 ounces wide egg noodles
1 tsp Italian seasoning
1-2 bay leaves
1 tsp onion powder
salt & pepper

To make:
  • Heat large stock pot on medium and add water (or oil) to warm up.
  • Add diced onion and garlic, sauté until onion is translucent
  • Add carrots, celery and corn, stir to combine and cook for 5-10 minutes
  • Add "chicken" and sauté with other ingredients
  • Add broth and seasonings and bring to a boil
  • Add noodles and turn heat down to simmer. Place lid on pot
  • Cook 10 -15 minutes until noodles are cooked
  • Add spinach (if using) and return lid to pot to wilt the spinach
  • Check for seasonings and adjust if needed
  • Enjoy!

{Soup Series} Creamy "Chk-n" Gnocchi Soup-Dairy Free

 I'm back with another soup recipe. This one was so good, we had it on Christmas. It's easy to make but feels special and decadent at the same time.  It's also super creamy without any dairy.



Ingredients

1/2 cup raw cashews, soaked in boiling water for a few hours
4 cups vegetable broth
1/2 medium red onion, diced
2 cloves garlic, minced
1/2 cup riced cauliflower
1-2 cups raw spinach (or kale)
3 small carrots, diced
3 stalks celery, diced
1 (18oz) package of potato gnocchi
2 meatless chicken breasts (I use Don't be a Chicken brand)
Spices: onion powder, garlic powder, Italian seasoning, salt, pepper and crushed red pepper flakes(optional)

To make:
Serves 4-6
  • Start by soaking your cashews in boiling water for a few hours or overnight.
  • Sauté onions, garlic, carrots, cauliflower & celery in a large stock pot with some water or olive oil until onions are translucent
  • Microwave the "chicken" patties until defrosted and cut into bite size pieces, add to the stock pot and cook through 
  • Add spices to taste. I usually add 1/2-1 tsp of each onion, garlic, Italian seasoning to start. Season with salt & pepper. 
  • Add vegetable broth and bring to a low boil
  • Add gnocchi and cook for about 5 minutes, then reduce heat to simmer
  • Drain soaked cashews and blend with 1 cup of water until smooth
  • Add the blended cashews to the pot and stir on low heat
  • Add spinach (or kale) and cook until wilted
  • Check for seasonings and serve.  Add some crushed red pepper flakes for a little kick!

{Recipe} Easy Peanut Noodles - Pantry/Freezer Meal In Minutes

 This is one of those crave-worthy meals that I can make almost any time because I usually have all of the ingredients on hand between my pantry, fridge and freezer. I use whatever fresh veggies I have available but frozen also work in this.  

Ingredients:
(2-3 servings)
1 package Trader Joe's Knife Cut Squiggly Noodles (or approximately 4 oz of pasta)
1 can of chickpeas, drained and rinsed (or protein of choice)
1/4 cup peanut butter (I used Kirkland brand)
1 TBS maple syrup
1 TBS Srirachi (less if you don't like too spicy
2 TBS soy sauce
1 tsp sesame oil
2-3 cups chopped vegetables (I used red onion, broccoli slaw, bell peppers, snap peas, carrots, frozen corn and edamame)
Optional: Sesame seeds and chopped scallion for topping
We've been loving the Trader Joe's Squiggly Knife Cut Noodles lately (seen in this post) but any pasta would work.
To make:
Chop up the vegetables and set aside
Bring a pot of water to a boil and cook noodles according to package directions
Make the sauce by whisking the peanut butter, maple syrup, sesame oil and Srirachi in a small bowl.  Set aside.
Sauté vegetables in water (or oil) and cook approximately 10 minutes until tender
Add chickpeas
When the noodles are done cooking, drain them and add to the vegetable mixture
Toss with the sauce to coat the noodles

Serve immediately. Try topping with sesame seeds, scallions and more Sriracha.  Yum!
