What I Eat In a Day (Clean Out The Fridge Edition!)

We were getting ready to go away for the weekend and needed to use up some produce. I thought I'd take you along for the day to see what I ate and how I used up the food.

I started the day with a big bowl of oatmeal  and added our last banana. I also topped it with some Trader Joe's Pumpkin O's, dried cranberries and pumpkin seeds and LOTS of cinnamon.
On to lunch! I had a zucchini that I needed to use up and some red onion. 
One of my favorite ways to make zucchini is to sauté it with some onion, minced garlic, liquid aminos (or soy sauce) and a tiny bit of sesame oil.  I finish it off with sesame seeds and green onions if I have them.
I had that  with a veggie burger and some iced passion tea.
Snack time was some leftover apples (I had sprinkled them with cinnamon) and pumpkin pie hummus.
Here's what I needed to use up for dinner: a mix of potatoes, some cauliflower almost past its prime and some broccoli crowns.

I made this Creamy Garlic Cauliflower Sauce to top our  potatoes and roasted the broccoli.  Fridge was cleaned out!

Random Saturday

Sometimes we just have a random Saturday and those can be my favorite kind of days.

We were home for the weekend and didn't have any plans.  My mini roses bloomed again!

There weren't any flowers for sale at the markets but I got this gorgeous bouquet of eucalyptus!

Birthday Weekend in Brooklyn & Beyond

 I had a fun birthday weekend that kicked off with a trip to Brooklyn to visit City Girl...

and this handsome guy who is getting so big!  After some playtime with Apollo we headed out to walk around Brooklyn and to our brunch destination.
We had brunch at The Butcher's Daughter.
I started with this oat milk cappuccino. I loved that mug!
I had a vegan artichoke quesadilla and it was amazing!

After brunch we walked around Williamsburg and ended up by the water.  The views were much clearer than the last time we were there.

Getting to spend time with this sunshine is wonderful! BTW,  she made my pretty eyelet mask.
More beautiful views before heading back to her apartment.
There was a beautiful bouquet of flowers for me when we got home that night (from College Girl).  I love that mason jar!

City Girl sent me this awesome sweatshirt (a nod to Schitt's Creek) and it is super soft.

{Travel} Ocean City, Maryland-Assateague Island-Day 2

I'm sorry if I left you hanging about Part 2 of our Maryland trip, I almost forgot!

 If you don't know what I'm talking about or need to catch up, you can read Part 1, here.

We woke up to bright clear skies in Ocean City. Coffee on the balcony is always a nice treat when you've got this view.
After a quick breakfast at the empty hotel dining room, we took one more walk down to the boardwalk and beach.  We decided we'd check out Assateague Island on the Maryland side because it was only about a 20 minute drive from Ocean City.
Our first stop was the visitor center where we got some information about the park. There was also a trail behind the center where we could view a historic property called Rackliffe House. The trail started with this magical pathway.

We walked through the woods but it was also overlooking this view of the water and a golf course.
We made it to Rackliffe House and had the grounds to ourselves.
Here's a little information about the property.
The herb  garden was looking very healthy!

We walked back to the visitor center on this very pine-y trail.

We then took a quick drive over a bridge and entered the parking lot for Assateague State Park.
We really didn't know if we'd get to see any of the wild ponies but there they were!
These two were right by the parking area.
We saw a few more as we walked toward the beach.
It was a very windy day on the beach so we didn't stay too long.  After our short visit to Assateague we definitely want to return and start on the Virginia  side next time. 
We stopped at the outlets in Rehobeth Beach, Delaware for a little shopping and lunch then picked up coffee at the cutest drive thru coffee spot called Mudslingers.
A pretty perfect weekend!

All the Fall Feels

 Fall is my favorite season and I dove in head first to all of its autumnal goodness.

Even before the temps dropped  I had to pick up some fall themed coffee (Vermont Maple Grove and Pumpkin Spice) and a  candle from  TJ Maxx to get me in the fall mood. 
I found this awesome Pendelton blanket at Costco and had to have it.  Look how cozy!
Celebrated a glorious fall day by wearing booties for the first time..

...and an outdoor lunch with my gorgeous mom!

I usually drink my coffee black but the fall spiced creamers get me!
I haven't tried this combo yet but it's ready for me when the iced coffee craving hits.
I broke out my fall decorations and even had a fire one night--it was that chilly!
I found these two fall themed  hummus varieties at Aldi. The pumpkin pie is my favorite.
Ever since I saw Julie's recipe for Slowcooker Lasagna,  I was obsessed  with making my own vegan version.  I used beef-less crumbles, vegan mozzarella, made my own vegan cashew/cauliflower ricotta and added spinach to the recipe. It was amazing!

Another yummy fall creamer. This one froths up really well for lattes!
I had to get some fall scented kitchen soaps and a candle.  I love the Acorn Spice! How's your fall going?
