{Recipe} Vegan Greek Salad

Greek salad is something I had missed since giving up dairy but it's back in my life thanks to finding Follow Your Heart Dairy Free Feta Crumbles.

Ingredients:

{For the dressing}

1/4 cup extra virgin olive oil

3 TBS red wine vinegar

1 garlic clove, minced

1/2 tsp dried oregano, plus more for sprinkling

1/4 tsp Dijon mustard

1/4 tsp fine grain sea salt

Freshly ground black pepper (I had ground pepper)

{For the salad}

1 English cucumber, chopped and seeded

1 red bell pepper, chopped

1/2 red onion, thinly sliced

1-2 cups chopped tomatoes (I used cherry & yellow from my garden)

1/3 cup pitted Kalamata olives

1/2-3/4 cup crumbled dairy free feta

1 small avocado, chopped (optional)

1-2 cups Romaine lettuce, chopped (optional)

To make:

• Combine salad ingredients in a large bowl, tossing gently
• Whisk dressing ingredients together in a small bowl

• Pour dressing over salad and toss gently to combine.
• Taste and adjust seasonings if necessary.

{Shopping} Fall Dollar Tree Expedition

A huge new Dollar Tree opened up not far from my house and College Girl and I went to check it out.

Of course Fall is (was) in full swing there with lots of decor items.  This was a few weeks ago so I'm wondering if they've started putting out holiday items?

I was impressed with the sign variety this year.

They are definitely stepping up their decor game.

Bougie velvet pumpkins!

If there's fall decor out...Halloween can't be far behind and they were starting to set up this aisle.

I thought they had some really cute notepads to pick from.

We both got these mask lanyards.  They are working out really well!

The kitchen section was full of fun items like these color coated spoons and spatulas.

More fun dish towels!

Apparently the white set of measuring cups is hard to find.  This also comes with measuring spoons!

I picked up these English muffins. They were tasty!

I always grab some magic erasers, you can get one of the name brand or two of the other brand. The off brand has worked well for us.

I picked up one of the dish scrubbers to make a cleaner for my shower like this one.  Fill it with half white vinegar and half Dawn dish detergent for a great shower scrubber.

I needed a car sunshade so I picked  one up. Spoiler alert--it's ripped a little and is quite thin but it's doing the job when I need it.

The craft section was huge. I liked the cotton blossoms.

So many crafting options!

I like to get super glue here and the individual tubes are so practical.

I bought this note book.  I love the color and how it closes with an elastic.

I got this decal for the powder room mirror in my photo studio.  It has another one on the back that says "Looking Good".

DT usually has some cute candle holders but this one was much bigger than I've seen before.

There were also wedding decor accessories.

I hadn't seen these decorative geode pieces before.

Finally some larger flameless candles that were new to me too!  Have you been to Dollar Tree lately?

{Travel} Alexandria, Virginia

 We had a quick trip to Virginia and decided to stay in Alexandria for the night. We'd visited before but hadn't stayed over.  You can find all of our Washington, DC trips here.

We chose the Hampton Inn in Old Town  Alexandria because it was in a great location for walking around Old Town.  We could park the car and go everywhere on foot!  It was right on King Street.

We were pretty hungry and headed out for a late lunch after we checked in at the hotel. We had brunch at The Majestic Cafe on Kings Street.  We walked down Kings Street to the water.   There were so many little shops and restaurants along the way.

It was such a hot day but much cooler down by the water.

I could sit there, watching the boats all day!

We stopped for cappuccinos at For Five Coffee Roasters.  We cooled off back at the hotel and got ready for dinner.

We walked over to Theismann's for dinner.  Mr. Click had been there before and said it would be good. The location was perfect, right around the corner for the hotel.

I was happy they had vegan chorizo tacos. Yes please!

That asparagus was amazing too! After dinner we walked around Old Town for awhile until it started to rain.  We headed home in the morning but it was a fun little getaway!

NEW (and Old Faves)Trader Joe's

It's hard to keep up with all the new items at TJ's. We tried some new ones and also stuck with some old favorites.

Oh man, these are GOOD! They seem bigger and have a better nut butter to pretzel ratio than the peanut butter filled variety. Dangerous!

These were a miss for us. They were way too spicy and I like spicy! City Girl said they taste like Takis which I've never had.

Always a favorite! So good with hummus.

These were also a miss for us, just weird tasting. :(

Some grainy staples.

I'm not sure we had ever had these but they were darn good.

College Girl loves the Irish Breakfast Tea and I like to try the small lotcoffees.
 

I think this will make a beautiful pasta salad.

I'm on my second bottle of this. No complaints!

It's exciting to see how many dairy free options they are coming out with. This one is a solid choice!

I could not resist these...they are pretty good in a pinch.

This was a great bottle of wine!

I forgot how handy these frozen peppers and onions are. A great freezer staple.

TJ's has the best nut butters and they are priced right.  I thought the simmer sauce was vegan but it's not...so off to college it goes!

Another new vegan meal. It was ok, the pasta was a little dry but overall it had a nice flavor. College Girl gave the burgers two thumbs up.

More College Girl purchases. She said the salmon was really good and she is a fan of the garlic naan bread.

She also picked up these chips..we were expecting a little salty but they were just sweet.

This is a new rice for me.  I love the packaging!

This is also new to me and we picked it up for College Girl.

Another small lot coffee variety. They've all been really good!

Thanksgiving in August?!  This is another new item.  We liked that it wasn't dry like some other vegan roasts but it didn't come with gravy like the Gardein one.

I think these were my favorite purchase!  They are the perfect little treat at about 60 calories for one.

More chips...we have a problem obviously!

College Girl has been doing lots of baking so we stocked up on chocolate chips and chunks.

Finally...a  really old favorite that we hadn't gotten in awhile. They are still so good!  What are your TJ's favorites?
