{Recipe} Protein Reese's Cup Treats

I like having healthier versions of treats in my fridge and this recipe caught my eye.
It's super simple, no-bake and comes together quickly with a few pantry staples.
To make:
Mix 1 cup of rolled oats, 1/2 cup peanut butter, 1/4 cup maple syrup, 1/4 cup protein powder of choice and 1 TBS chia seeds.
Press mixture into silicone muffin cups. Top with 1 cup of melted chocolate chips mixed with 2 tsp coconut oil (optional).  Sprinkle some flaky salt on top and refrigerate until set.
They really do taste like a Reese's cup!

{Recipe} Mayak Eggs - Korean Marinated Eggs

Here's another TikTok inspired recipe that I obsessed over until I tried it.
I had never heard of Mayak eggs until I saw this TikTok.


After watching this video of course my feed was full of other Mayak Egg recipes. The recipe is a simple marinade and produces flavorful, deliciously different eggs.   The Korean name for this dish translates to "drug eggs", that's how addictive they are!
They are definitely crave worthy! I started mine by soft boiling some eggs which is the traditional method.  I put them in an ice bath for easier shell removal after cooking.
I didn't have an actual recipe but crafted one from the videos I had seen
For the marinade:
half soy sauce/half water (about 1/2 cup of each)
green onions 2-3 whole  (you can also use some white onion)
garlic 2-3 cloves, crushed
sweetener (I used 2 tsp coconut sugar -but I didn't want mine to be sweet, traditionally you'd use 1/4 cup of honey)
chili flakes or chili crunch (or diced chili peppers)
sesame seeds- a few tablespoons
Mix the marinade together, add the eggs and marinate overnight or longer in an airtight container in the fridge.
Enjoy the eggs on their own also over rice or noodles.
They recommended Japanese mayo and crispy fried onions on top. I just used regular mayo.  
You can reuse the marinade a few more times. The second time I made them, I hard boiled my eggs and I preferred them that way.  

My mouth is watering just looking at these photos. I need to make some more ASAP!

{Recipe} 2 Ingredient Chocolate Chip Pumpkin Bars

I can't even really call this a recipe but it's so good, I must share!  This is another "Tiktok made me do it" recipe.

They require only 2 ingredients! Empty one can of pumpkin puree (not pumpkin pie mix) into a bowl and add a packet of chocolate chip cookie mix (Betty Crocker-17.5oz). Stir together. I added some pumpkin pie spice as well but that's optional.
Pour into a greased (or parchment lined) 8x8inch pan and bake at 350ºF for 35-45 minutes. Check for doneness in the middle.
Let cool and cut into squares.  I like them chilled in the fridge but they are good at room temperature as well. Try these even if you aren't the biggest pumpkin fan. They are not overly pumpkin flavored and not too sweet either.

{Recipe} Cranberry White Chocolate Protein Balls

 I'm back with another protein ball recipe!  This time I'm combining white chocolate chips with dried cranberries, which is a favorite cookie combo. I've slightly tweaked my original recipe.
{Recipe}
1/2 cup drippy peanut butter (or nut butter of choice)
1/2 cup protein powder of choice
1/2 cup almond flour
1/4 cup maple syrup
1/4-1/3 cup dried cranberries
1/4-1/3 cup white chocolate chips + more for drizzling
To make:
  • Combine peanut butter, protein powder, almond flour and maple syrup in a bowl and stir to combine. (if your nut butter isn't drippy enough, you may need to add some non-dairy milk to the mixture). It should resemble moist cookie dough
  • Add in cranberries and white chocolate chips
  • Roll into balls and place on a parchment lined baking sheet
  • Melt 1/4-1/3 cup of white chocolate in microwave and drizzle on top of balls
  • Freeze until firm
I store mine in the fridge in an airtight container. Enjoy!

{Recipe} Chocolate Covered Protein Bars

 It seemed like these bars were popular from my last post and I made another batch yesterday so I could share the recipe and photos with you.

Ingredients:
{For the bars}
1/2 - 1 cup runny natural peanut butter
1/2 cup protein powder of choice
1/2 cup almond flour
1/4 cup maple syrup
1/3 cup chocolate chips
Optional: pure vanilla extract 1/2-1 tsp
{For the topping}
1/2 cup chocolate chips
1 tsp coconut oil (optional)
Flaky salt

To make:
  • Mix peanut butter, protein powder, almond flour, maple syrup and optional vanilla extract in a bowl.  My peanut butter was near the end so it wasn't too runny. (I had to add a little soy milk to the batter but if the peanut butter is super runny, you shouldn't need to)
  • Add 1/3 cup chocolate chips and stir to combine
  • Press mixture into a parchment lined baking dish. I used a 6 x 9 inch pan.
  • Melt 1/2 cup of chocolate chips with 1 tsp of coconut oil in the microwave for 1 minute and check to see how melted it is. Keep microwaving at 30 second increments until mostly melted.  Stir to melt the remaining pieces.
  • Spread the melted chocolate over the mixture in the pan. Smooth with the back of a spoon
  • Optional but highly recommended! Sprinkle some flaky salt over the chocolate before chilling
  • Once chilled thoroughly in the fridge for a few hours, remove and cut into little bite sized bars.  I like a pizza cutter for this but a regular sharp knife works as well.

  • Store in an airtight container in the fridge. Enjoy!

Healthy Snack Boxes

This month I got to try something new. The company behind Daily Goodie Boxes launched a new website called Healthy Snack Boxes. and offered me box of healthy snacks to review.

Healthy snacks sounded good to me!
I was so impressed with the selection and options..some sweet, some savory and even some kombucha tablets (just add to water).

Cucumber (Chickpea) Tuna Sushi

 Here's a fun way to get your veggies.  It makes a great snack too.

I was inspired by this recipe but made it my own with my Chickpea Tuna recipe. Have you checked out my Recipe Index lately?  There are 200+ recipes!
Ok, back to the sushi rolls.  I used an apple corer to remove the seeds from a cucumber.
That does a pretty good job but I had to use a knife to remove some as well.  
After the cucumbers have been de-seeded.  Turn them on their cut sides and let them drain on a paper towel for about 15 minutes.
Stuff them with your favorite tuna salad.  It's best to add a little at a time and pack down into the cucumber.
Cut the cucumber in slices and enjoy!
They are little hard to eat with chopsticks but good for the photo.

{Recipe} Almond Flour Applesauce Muffins

  I had a jar of applesauce languishing in the fridge and a big bag of almond flour that I'm trying to use up and I found this recipe for muffins.  I adjusted it to make it vegan.

Ingredients:
1 cup of applesauce (I used unsweetened)
1/4 cup of maple syrup
1 tsp vanilla
2 tsp apple cider vinegar
1 1/2 cups almond flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon+ extra for top
1/2 tsp salt
1/2 apple, diced

To make:
  • Preheat oven to 350ºF
  • Line muffin tin with liners (or use silicone)
  • Mix wet ingredients in large bowl-applesauce, maple syrup, vanilla &vinegar
  • Add almond flour, baking powder, baking soda, cinnamon & salt. Stir combine
  • Fold in diced apple
  • Scoop 3/4 cup of batter into each muffin cup. Sprinkle tops with cinnamon
  • Bake for 25-35 minutes or until tops are golden brown
Because I left out the eggs and oil and increased the amount of applesauce, these did not hold together as well as traditional muffins but they firmed up in the fridge and were really tasty!  College Girl made the original recipe as written with chocolate chips and said they turned out great as well! Options!

{Recipe} Healthy Seed Bark

This healthy seed bark is a mildly sweet treat that is fully of healthy seeds and a kick of ginger!

It's so easy to make and keeps well in an airtight container for weeks.
Ingredients:
1 1/2  cups raw pumpkin seeds
1/2 cup raw sunflower seeds
1/4 cup raw (or toasted) sesame seeds
1/4 cup ground flaxseed
2 TBS chia seeds
1/4 cup crystallized ginger, diced  (optional, but highly recommend)
2-3 TBS maple syrup

To make:
Preheat oven to 350ºF.
Line baking sheet with parchment paper.
Add all of the ingredients (except maple syrup) to a large bowl, stir to combine.
Add maple syrup and stir well to coat all of the seeds.

Pour out onto lined baking sheet, spreading out to about 1/4"-1/3" thick.
Use another sheet of parchment paper on top to press it out evenly.
Bake for 18 minutes, flipping pan halfway through baking.
Keep an eye on it so it doesn't burn.
Remove from oven and let it cool for about 20 minutes, you'll  hear it crackling as it crisps up and cools.
Break it up  into bite size pieces.  
Once completely cool, store in an airtight container.
This is a lot like a crunchy granola and I love it on top of my oatmeal or by itself  as a snack.

New (to me) Food Finds

I really miss my Trader Joe's trips (and even Target) but I've still managed to find some new (to me) food finds.
We picked these Grillo's  Pickles up at Costco and went right through them. This is our second bucket.  If you like dill pickles, these are for you!
 This creamer was new to me. I was trying to froth it up (spoiler alert-it did not froth well but is still good).
 A new kimchi to try.  Spicy!
I think these are based on the açai bowls that Costo sells in the food court. They are pretty close to that. They comes with toppings too!
 I'm not always a fan of cauliflower snacks but I actually really like these tortilla chips! So good dipped in queso or Mr. Click's corn salsa!
 Mr. Click has switched to this oat milk from half and half.  We get it from Amazon and it froths amazingly well!
 Another Costco find--they are good but I think I should have let them cook a little longer than suggested to get more crispy. I bet they'd be great in an air fryer.
This hot sauce has a smoky taste and it's not overwhelming spicy.
I know these aren't new but we've rediscovered them and get the big box at Costco.   I love the mango flavor!
