Loving Lately

 Life has been busy lately but not too busy to slow down a little and enjoy the little things.  Like....

Long walks in the park. I love this time of year!
Making recipes out of a new cookbook.

Mother's Day pancakes from the above cookbook (Mr. Click made them for us). 
Being spoiled on Mother's Day. I got a new tea kettle that I use daily. I also got lots of flowers.  I planted the mini roses outside.
Pretty spring flowers.
Finding recipes on TikTok. I still haven't tried this one but I want to!
Making a headpiece for a photoshoot out of a headband, zip ties and spray paint.
More walks!  I'm on a 45 day step streak. What are you loving lately?

Plant Progress

Hey, it's been a bit (thanks for checking up on me Laura!). Life has been busy and I'm not always sure I want to get back to blogging but I do miss it. I have lots to catch up on! So here goes!

First off, is my plant progress and life as a new plant mom.  In March I set out to get some cat-safe plants and see if I could keep them alive.


I found some attractive pots at the Target Dollar Spot.

I also started fertilizing the plants with these spikes (from Dollar Tree).


Here's how they are looking now.  They seem to be thriving. The Calathea on the left has been nibbled on but that's ok.
The Bromeliad also gets nibbled on but it is loving life in the bathroom.
Downstairs I have to keep the spider plant up high.  It's doing ok.

The little Pepperomia is making baby spikes with new growth and the Polka Dot plant has doubled in size since I repotted it.  
This Pepperomia is sprouting new growth too. I think I need to repot most of the plants now.


The Purple Waffle plant is looking a little sad. I'm not sure what to do with it but the Christmas Cactus is doing well.
The Rosemary needs to be moved outside if  Nessa will allow it.  Do you have any plant advice for me?

{Recipe} Trader Joe's Green Goddess Dupe

I'm pretty obsessed with TJ's Green Goddess dressing but I can't always get it so I tried to replicate it at home. Spoiler alert...it turned out perfectly and I made mine without oil.  You won't miss it!
Ingredients:
1 small (82 grams) ripe avocado (no brown spots), peeled
1/2 cup water, plus more to thin out the dressing
3 TBS apple cider vinegar
1/2 cup green onion (3-4 stalks)
2 TBS white onion
1 TBS fresh lemon juice
1 TBS dried chives (or use 1/4 cup fresh)
2 TBS dried parsley (or use 1/2 cup fresh)
1 TBS dried basil (or use 1/3 cup fresh)
1 clove of garlic
1/2 tsp sea salt (or more to taste)
freshly ground black pepper to taste

To make:

  • Add all ingredients into a blender (I used my Ninja), starting with a 1/2 cup of water. Blend until smooth.  
  • Taste and adjust seasonings if needed, blend again. 
  • Add more water to thin out the dressing (optional).  It thickens in the fridge so I make mine a little runny to begin with.  I used 1 cup of water total.
  • Store in an airtight jar in the fridge for up to 5 days.

Enjoy on your salads or as a dip!
