I make this "recipe" a few times a month but had never posted it. It's so easy and I didn't have exact measurements until now. Tofu is a great vegetarian protein source, it's cheap and takes on whatever flavors you season it with.
Ingredients:
1 (14 oz) package of extra firm tofu (firm tofu also works), pressed and drained (see step 1)
1/4 cup soy sauce or liquid aminos
1 heaping TBS Dijon mustard
1 heaping tsp minced garlic
1/2-1 tsp Sriracha sauce (optional)
1/4 tsp dried mustard
1/8-1/4 tsp dried ginger
pinch of red pepper flakes (optional)
To make:
1) Drain and rinse tofu. Press out excess moisture. I used a tofu press but tofu can also be wrapped in kitchen towel and placed under something heavy to press. I usually leave mine in the press for a few hours to overnight.
2) Assemble marinade ingredients and combine. I use the tofu press to mix them up but any airtight container will work.
3) Pat tofu dry and cut into squares
4) Add tofu squares, a few at a time, to the marinade and gently stir to cover all of the squares.5) Cover and refrigerate for at least 1 hour or up to overnight. (I've also immediately baked if I don't have time or kept it marinating for days-it's very forgiving).
6) When you're ready to bake, preheat over to 400ºF and cover a baking sheet with parchment paper. Spread the tofu squares and the marinade over the pan in a single layer.7) Bake for 20-30 minutes, checking halfway to flip the tofu squares.
8) I like mine extra crispy so I flip the tofu a few times and bake until they are the texture I like. They can be eaten right out of the oven or can be packed in an airtight container and kept in the fridge. 9) I add mine to salads and bowls. They pack a flavorful punch!
