Things I've been loving lately...

The first good watermelon of the season. It was so sweet and juicy!

I made a potato pie for my brother in law and one for us too.

I found a youtube video and recipe for making large single serve cookies for one (or two).  We made two different kinds-sugar with sprinkles & chocolate chip.

Beautiful sights along my daily walks.

Getting a whole stack of cook/home/cat books from the library.

Currently reading.  The deck has been my favorite reading/working spot.

I also recently read both of these books.

This has been my favorite nighttime tea lately. I'm on my fourth box!

{Recipe} Sheet Pan Cauliflower Gnocchi & Sausage

 This has to be one of the easiest dinners ever.

It comes together quickly with just a few ingredients from Trader Joe's.

Ingredients:

1 bag Trader Joe's Cauliflower Gnocchi (still frozen worked for me)

1 package Vegan Italian Style Sausage(or sausage of your choice), cut into pieces

2 Bell Peppers, chopped

1/2 red onion, sliced

Olive oil

Seasonings: Garlic Salt, Pepper, Italian Seasoning, Crushed Red Pepper Flakes(optional)

To make:

1) Preheat over to 400ºF

2) Line baking sheet with parchment paper

3) Combine gnocchi, sausage, peppers and onions on parchment lined sheet

4) Toss with olive oil, add seasonings to taste and toss again

5) Bake for 25-35 minutes, stirring occasionally

Bake until everything is lightly browned and crispy.

Serve immediately.

{Shopping} Costco Finds-April & May

I haven't done a Costco post since February and this one is all about spring and summer.

I love their plants and flowers. This geranium hanging basket has been doing well on the front porch.

This looks like a great container garden ready to go (and grow)l

They had lots of other bulbs to pick from too.

I love their huge Boston Ferns and got two this year.

I picked up a new indoor/outdoor broom set and dust pan.  It feels really sturdy.

Mr. Click picked one of these beach carts up awhile ago (I'm not sure if I included it here before or not). It's definitely an upgrade from our old beach cart.  We got it for the beach but recently used it at a winery to cart all of our stuff back and forth. It worked like a charm!

This double hammock in a bag looked like a fun summer activity.

The berries have been so good!

These blueberries were spectacular and that container fit perfectly in the produce keeper I got from my last Costco post.

These Cauliflower Sandwich Thins looked interesting. They are pretty good!

I was so happy to find my favorite tortillas in a 2 pack!

I was very tempted to try this body wash but I'm finishing up what I have on hand.

Also very tempted because I love this brand. I hope it's still there when I run out.

We tried this Chunks cat food but my cats were not into it. 

When I have time I love the peruse the clothing at Costco. This sweatshirt was so soft but I resisted!

We've had a lot of rain this spring and I've gotten a lot of use out of my raincoat but this little packable one would be great for travel.

I love a lounge set....

...the softest material!  But I didn't need one so I didn't buy it.

I did get this 4-piece Women's sleep set.  It's very soft but it's already unraveling a bit so I should have returned it but I'm keeping it.

{Travel} Nashville Trip- The End

 Our last full day in Nashville and I mean, FULL!  To catch up, you can click here.

We started the morning at this cute coffee shop in town.

After that we headed over to the Country Music Hall of Fame Museum.

We did an audio tour that was really good.  That's Minnie Pearl's dress and famous hat on the left. I loved that pretty typewriter of Cindy Walker's on the right.

We checked out a few honky tonks for live music and lunch.

After lunch we took at uber to 12th Street to check out the shops.

They had some cool murals.

I was excited to get to see a Draper James store in person.

The store was adorable and I did a little shopping for myself.

We had tickets to The Grand Ol' Opry that night and went over to Gaylord Opryland Resort for dinner first.

It was a stunning resort and felt like we were in another world as we walked around it.

Some of the rooms look down on the gorgeous courtyard.

It was an easy walk over to the Grand Ol' Opry from the resort.

The theatre is beautiful with great acoustics --and the seats are comfy!

We didn't know any of the performers except the Gatlin Brothers (and Larry Gatlin was the MC) but we enjoyed them all.

It was such a fun evening!   We left for the airport in the morning full of good memories and ready to go home.
