{Decorating} Fall Around The House

It's hard to believe that Halloween is on Sunday!

I've been decorating for fall since last month but have added in some Halloween touches in the last few weeks.
My color palette is pretty neutral with some dark oranges sprinkled in.
I added the composer busts to the mantle for a little spooky vibe.
The Ouija board is on a little easel to display it on the hearth for a fun Halloween touch.
I got this wooden leaf garland a few years ago and like it's subtle design.
The garland on the fireplace is pretty old so maybe it's time to change it out next year for something different.
I found this Anthropologie Volcano candle dupe at Walmart.
The kitchen table got a little fall glow up.  The pumpkin in the background is real.
I also like to sprinkle faux pumpkins around the room.
This dark blue green one is a little unexpected.
I get at least one big pumpkin for outside.
Then I mix in some faux pumpkins and real mums.
Do you decorate for fall?

{Recipe} Lentil Shepherd's Pie-Vegan & Oil Free

I can't believe I don't have a shepherd's pie recipe on the blog--I make it a lot so it was time to pin down my process.

Ingredients:
For the mashed potatoes:
3 large potatoes (approximately 3 pounds), peeled and chopped
1/2-1 cup of non dairy milk (I used soy)
1 tsp garlic powder
1 tsp onion powder
2 TBS nutritional yeast
For the filling:
1/2 onion, diced
2 tsp minced garlic
1 1/2 cups dried lentils (green or brown)
4 cups vegetable broth
2 cups mixed vegetables (frozen is fine or a mix of fresh & frozen)
1/2 bag frozen chopped kale
1 can tomato paste
1 TBS vegan Worcestershire sauce
1 tsp dried poultry seasoning
1 tsp dried thyme
1 tsp dried basil
1 dried bay leaf
salt & pepper
paprika for topping
To make:
  • Preheat oven to 400ºF
  • Add the chopped potatoes to a pot and cover with water. Bring to a low boil and cook until fork tender
  • Sauté the onions in some water, adding more as needed. Add the minced garlic and cook for a few minutes
  • Add lentils and broth and bring to a boil then turn down to simmer until lentils are cooked
  • Get your veggies ready. I used a mix of frozen corn and peas, fresh carrots and riced cauliflower

  • Add tomato paste and spices to the lentil mixture while it's cooking.
  • Add vegetables to the lentil mixture once the lentils are done cooking (25-35 minutes)
  • Add some kale or spinach (optional), stir and heat through, keeping on warm
  • Drain the potatoes, reserving some (1/2- 1 cup) of the cooking water.
  • Mash the potatoes with salt, pepper, garlic powder, onion powder, nutritional yeast and non-dairy milk.  Add some of the reserved cooking water if needed.  Taste for seasonings and adjust if necessary
  • Pour the lentil mixture into a 2 quart baking dish  (remove the bay leaf)--mine wasn't quite big enough so I had to make a small pie too!
  • Spread the mashed potatoes over the lentil mixture
  • I like to decorate the top with a fork and to add paprika
The bonus pie.
  • Bake at 400ºF for 20-30 minutes until the top is golden brown
Enjoy!

Serves 4-6.  It's even better the next day!

The Black Crowes, Van Gogh & A Block Party

We had one of those weekends where everything happened to fall around the same time...a concert, the Van Gogh experience and a block party gig.
It started with a late birthday celebration for Mr. Click at the Black Crowes in Camden.
When we got there, someone from Live Nation asked if we'd  like to upgrade our seats and of course we said "yes please!".
We got moved up a whole level.  The concert was so good! It felt great to see live music again in an open air pavilion -but covered from the rain.
The next day we had tickets to Van Gogh, The Immersive Experience Philadelphia.   We bought the tickets awhile back and expected it to be in Philly but it ended up in Upper Darby.
It was so breathtaking and beautiful.
This room was my favorite part where all of the paintings moved around and you really were immersed in the artwork.

It was definitely a must see!

The next day Mr. Click had a gig at our friend's block party.  This little guy is the guitar player's son and did the entire show with them, even singing a solo! He definitely stole the show!

{Travel} Late Summer Beach Day

After we dropped College Girl off, we took a day off to visit our favorite beach town.

Of course it started with some coffee.
We had the beach to ourselves, it was so empty!

I packed a burrito bowl for my lunch. Everything tastes better at the beach.
We took a walk on the boardwalk and I was admiring these flowers.
It was so nice to be there when it wasn't busy.
My Nook wasn't working and I saw a Little Library box and picked up this book for some light beach reading.

We ended the day like we started it, with some more coffee before heading home.  A beach day is always good for the soul!t

{Travel} College Drop Off (again)

We dropped College Girl off in Boston last month. It was an easy move-in since she is living in the same apartment.

We checked in at our favorite hotel after dropping her at her place.  Elevator selfie before dinner was a must.  #newdress

We took her to dinner at Davios that night.
The next day we woke up to a beautiful morning in the city.

We had breakfast at Pressed Cafe that morning. College Girl and I split this Agua Fresca with our meal.  We went grocery shopping to get her all stocked up.
Mr. Click and I tried a new place for coffee. It was yummy!
We had dinner at the food hall Time Out Market Boston. They had so many options!
Another beautiful view!

More shopping and breakfast in the morning before dropping her back at her place! Time sure is flying by!
