{Recipe} No-Beef Stew

We were craving some stew, minus the beef and this recipe hit the spot!
 Ingredients:
(Makes 4 servings)
1 yellow onion, diced
2 cloves garlic, minced
1 cup baby carrots (or 4 large carrots, sliced)
1 pound of potatoes cubed (peel if you like)
4 cups vegetable broth
2 TBS balsamic vinegar
1 tsp ground thyme
Salt & Pepper to taste
Scallions, chopped (optional)
To make:
  • Heat up some water (or olive oil) in a Dutch oven and add diced onions and minced garlic
  • Cook for 4-5 minutes until onions are tender
  • Add carrots and potatoes to pot and place lid on top
  • Cook for 5-10 minutes as vegetables begin to soften
  • Add remaining ingredients and place lid on top. Simmer until vegetables are fork tender
  • Taste and adjust seasonings if needed
  • If you want thicker stew, you can puree some of the soup in a blender and add back to the pot
  • Serve and Enjoy!
We served ours over rice and garnished with scallions.

{Field Trip} The Museum of the American Revolution

 We checked out the Museum of the American Revolution in Philly a few weeks ago.

We were able to get tickets from out library -- did you know you could do that?
Mr. Click had been there before but it was my first time.  It's a beautiful new-ish museum all about the American Revolution.  

I loved this tree room (I'm sure there's an official name for it).  The best part of the museum is the Washington's War Tent show. No cameras were allowed but you can see it in the link if you're interested.  It's amazing that they have George Washington's actual war tent!
After the museum we walked over to Penzey's.
I was pretty excited to get inside an actual Penzey's store.  I've posted about my love of Penzeys here.
It was so overwhelming and we definitely stocked up on their amazing spices and blends.
We had lunch at Monster Vegan and it had a very cool spooky(not scary) vibe plus great food!
We tried these delicious macaroni & cheese balls.
We ended the day with cappuccinos from Greenstreet. Yum!

Trader Joe's Finds - Old Friends and New

 This was a TJ's run where we stocked up on a lot of old favorites.

We've purchased all of these frozen staples before and love them!
Mr. Click wanted the turkey chili and we got the marinated artichokes last time we were at TJ's. They are great for throwing on a salad or in with roasted veggies. The mandarin oranges are a staple for me especially when I'm craving this Applebee's Copycat Salad.
I never want to run out of these three items so I always buy a back up to keep in the pantry.
This was a NEW item and they are tasty. I still miss their soy ice cream sandwiches but these are a good alternative.
This was a very special purchase and a fantastic Cab. If you see it, buy a few bottles. You won't be sorry!
I was excited to get a Sumo orange. I've been loving the Cara Cara oranges that I got at Costco too.  The Sumos are so easy to peel and really juicy! Have you found anything new at TJ's lately?

{Recipe} Almond Flour Chocolate Chip Cookies-Vegan & Gluten Free

These super easy chocolate chip cookies hit the spot when I need something sweet.
They only have a few ingredients and come together quickly.
 Ingredients:
1 1/2 cups super fine blanched almond flour
1/4 cup gluten free flour or tapioca starch(can sub regular flour if you're not GF)
1 tsp baking powder
1/2 tsp cinnamon(optional)
1/2 cup pure maple syrup
2 tsp vanilla extract
1/2 cup dairy free chocolate chips (I used Lily's)

  • Preheat oven to 350ºF
  • Line a baking sheet with parchment paper
  • Mix all ingredients together in a large bowl

  • Scoop dough in spoonfuls onto baking sheet

  • Bake for 15-20 minutes.  (I usually bake mine for 20 minutes for crispier cookies)
  • Makes about 20 cookies

{Field Trip} Plant Shopping & Distillery Tasting

 Since I adopted my kitties last year, I had given up on having plants around the house. The few I had were toxic to cats and I was too worried having them around my babies.  I missed having plants so I started researching cat-safe plants and found quite a few of them.


Armed with my list, we headed to our local greenhouse. I was pleasantly surprised that they had so many on my list:

There are quite a few different Calathea varieties.

I definitely wanted a spider plant.
Here are the plants we came home with. I will keep you posted how it's going. I'm going to try and be a better plant mom than I've been in the past.

We had another Groupon date - this time to a distillery in Flemington, New Jersey so we headed up there after plant shopping. First we stopped for lunch at Blue Fish Grill.  I ordered the Asian Vert Salad.
  
The restaurant was in a cute shopping area so we explored a bit after lunch and stopped for some coffee at Factory Fuel.
We got to Skunktown Distillery shortly after it opened. 
We were given a short tour and then had our tasting.
We're not really "spirits" drinkers so we only sipped them but it was fun to hear about the distillery and sample a few of their award winning spirits.  The Apple Pie was our favorite!

A Very Random Loving Lately

 Here's what I've been making, buying, watching and loving lately...

Crock Pot Baked Potatoes
We have Baked Potato Night a few times a month and sometimes we make them in the crock pot if we won't be home all day. I thought everyone knew you could make them that way but in case you didn't..it's so easy!  Just scrub the potatoes well and wrap them each in foil. You can rub them with olive oil if you like but I don't do that.  Pierce the potatoes with a fork a couple of times. Add the potatoes to the crock pot and bake on low for 8-10 hours for high 4-5 hours.  They come out very soft and creamy this way.

Liquid Vegan Mozzarella
I saw this stuff on TikTok and knew I had to try it once I found it.
I put it on some take out pizza and reheated it. It is pretty amazing! It bubbles up and browns just like dairy mozzarella.
Cauliflower Breadless Crumbs
Remember these from last month's Daily Goodie Box? I made some stuffed mushrooms with them and they are delicious! The flavoring is so good and they are super crispy!
Stress Relief Eucalyptus Tea Lotion

This is an oldie but goodie that I've been rediscovering. 

Slim Fit Joggers

 I've been loving these joggers from Amazon. They are super soft and wash and dry really well.

Raglan Heart T-shirt

I also got this Raglan Heart T-shirt from Amazon and it was perfect for Valentine's Day but I'll wear it other times of the year too.

Succession

We're kind of late to the party on this show but we are loving it. We just finished Season 1.
