{Recipe} Strawberry Crunch Cake

Here's another "TikTok made me try it" recipe. This tastes like one of those strawberry shortcake frozen bars from Good Humor.

Bonus: I found all of the ingredients at Dollar Tree (it was a sign!). I didn't make mine vegan but there are easy vegan swaps for all of the ingredients (and Oreos are accidentally vegan).

Ingredients:

(Full Recipe, I halved it)

1 Strawberry Box Cake Mix (If you can't find strawberry cake mix, you can add some strawberry jello mix to your batter)

1 can Sweetened Condensed Milk

1 tub Cool Whip, thawed (or homemade whipped cream)

20 Golden Oreos, crushed

1/2 stick butter, melted

2-3 TBS Freeze dried strawberries, crushed

fresh strawberries for garnish (optional)

To make:

Bake cake as directed on package.
While cake is baking, make the crunch topping: Combine crushed oreos with freeze dried strawberries and melted butter in a bowl. Set aside.
When cake is done baking, remove from oven and let cool for 15 minutes, poke holes with a fork and pour sweetened condensed milk over the top and let is soak in.
Frost cake with thawed whipped topping(I used about 1/2 of a tub) or homemade whipped cream.
Sprinkle crunch topping over the frosted cake.
Refrigerate for at least 2 hours before serving.

I topped mine with some fresh strawberries. It was a hit and I can't wait to make it again. Next time I might try chocolate cake with regular Oreos. The possibilities are endless!

{Travel} Virginia/Maryland Getaway, Concert & Gun Powder Falls State Park

In my last post, you saw our quiet Memorial Day weekend which was ok because the following week we had fun little getaway planned.

Mr. Click's work band had a gig in Virginia. Our first stop was band practice and I took a long walk around this pretty shopping area while they rehearsed.

We stayed at a TRU by Hilton and it was my first time staying in one. I loved the bright lobby.

Our room was cute too.

I thought it was all so well designed.

I appreciated the extra shelf in the bathroom. There are never enough surfaces in a hotel bathroom if you ask me.

We went for coffee at one of our favorite places.

We had dinner that night at Ted's Bulletin. I loved it!

We sat around this fire pit for awhile after dinner.

In the morning we found a new place to walk.

It was Elizabeth Mills State Park.

The views were stunning. We traveled to Manassas later in the day (and stopped for some outlet shopping).

That night was the gig and this was my 'fit' (new shirt from LOFT outlet).

It was the perfect day for an outdoor show.

Work band was on fire!

It was a corporate event with lots of food and drink options. I tried the frosé.

We stayed for the headliner, Coffey Anderson. I didn't know of him but became a fan by the end of the night.

He was such a nice guy too.

I've started watching his Netflix show now.

The next morning we had breakfast in the hotel (a different TRU by Hilton). I was mesmerized by the pancake maker. You can watch it here on my Reels https://www.instagram.com/heather_ourlife/

We headed out for some more hiking and stopped at Gunpowder State Park in Maryland.

It wasn't great for hiking but it had a nice beach.

This sign explains the name Gunpowder River and the legend that surrounds it.

We walked around for awhile and then found a place for lunch on the water.

We were about halfway home and Bowley's was a good place to stop.

A Quiet (and Productive) Memorial Day Weekend

We didn't have any plans for Memorial Day weekend so we had a bit of a staycation and also got things done around the house.

The weather was beautiful and we took a drive to Lambertville, New Jersey.

We had lunch at Local Greek for the first time. We would definitely go back.

We walked over to New Hope, PA just across the bridge and did some browsing in this vintage shop.

Back in Lambertville, we stopped at Chez Alice Patisserie. The pastries all looked amazing but we were still too full from lunch so we just ordered coffee.

We wanted to work on the deck and it needed a good cleaning. Sweeping, leaf blowing and finally power washing. There was so much pollen! We had to replace some of our solar string lights as well.
