Scavenger Hunt Sunday

We were away this weekend and I was determined to get my scavenger hunt shots on the trip.

1. Capture The Sky
a shot from the car...we drove through some crazy weather and the sky didn't know what to do, this house looked like it was glowing.
2. Everyday
What's more every day than the tide?

Signs of life on the beach

I could get used to this!

{What's for Dinner} Roasted Vegetable Parmesan

We have one vegetarian in the family and the rest of us are 'vegetarian friendly' so I'm always looking for something we'll all enjoy for dinner.
This recipe is adapted from one of Giada's recipes.
Roast up your vegetables. I used 1 eggplant, 1 fennel bulb (my new fave!), 1 zucchini, 2 red peppers.
The fennel looks like onion but has a licorice like smell and a delicious taste.  Next time I will use two fennel bulbs. You could also grill the veggies but I roasted them in the oven with some olive oil for about 30 minutes at 400F, turning frequently.
We had some leftover homemade vegetarian sauce in the freezer but I needed to supplement with some jar sauce too. Spread some sauce on the bottom of a 9 x 13 pan.
Layer the heavier vegetables first (eggplant)
Add a layer of mozzarella cheese and some Parmesan cheese.
Add more sauce

Cover with next layer of veggies(zucchini and peppers)
more cheese..
more sauce and then the final vegetables (fennel and some fresh spinach)
More sauce and cheese... do we see a pattern here?
Bake at 350 F for 25 minutes
I don't have the best picture of the finished dish because it was devoured so quickly.

This one's definitely a keeper. Have you ever tried fennel? Have I just been living under a rock?

{Entertaining} "the office" birthday party

 What do you do for a 17 year old's birthday party?
We planned it around her favorite show.
the office!

I found some fun ideas here.
We made up some "nifty gifty" goodie bags (filled with office supplies and chocolate)

I had some fun with the decor. The dining room became the conference room with note pads, pens and Dunder Mifflin water bottles.
We made a sign just like one from an episode
More water bottles (I printed up the labels)

The kitchen was the 'break room'.

Had to have a stapler in Jello.
Some dismal office decor (also pulled from an episode)

The menus(I used American Typewriter font)

Scavenger Hunt Sunday

Ashley was using her white boards for this week's Scavenger Hunt Sunday and I've been experimenting with my white boards too.

This isn't real chocolate but it sure looks like it is.

Canned pumpkin in my pumpkin colored kitchen.

The piece my daughter is working on right now (it always makes me tear up when I hear it)

A few books that I keep stacked in my family room.

Thriftin' Away Again At Good-will-aville

Come on sing it with me......

I think I'm coming out of my winter funk and a quick trip to Good Will sure helped.
I found this huge (24 inch!) Bombay & Co. clock. I've been looking for one of these for the basement and it's cheap-o price tag sealed the deal.  It had been marked down to $12.97 from $19.99. Sweet!
The rest of the store was pretty slim pickins but I did manage to pick up a few other things.
I love the shape of this red bowl.
The price was hard to beat as well.

It went right up on the mantel.

I have a little (Spring) project in mind for this green basket.
I popped a potted plant in it just for fun.

And this bunny tin looks like it will be a perfect addition to my Spring/Easter decor when the time comes.

Her First Dance

It was a busy weekend! 
This one had her first school dance.
The outfit was chosen, the hair was curled,
Corsage purchased and oohed and ahhed over...
It's three of the tiniest pink roses with ribbon to match her dress.

Photos were taken (while I was getting ready to host a birthday party that same evening!)
Best date for your first dance!
They had a wonderful time and came home to a houseful of people.
