{Recipe} Mushroom Toast

This isn't so much a recipe as it is a guide.  Move over, avocado...toast has a new BFF and it's mushrooms.  This makes a savory, satisfying meal or snack.
 You'll need bread (for the toast), some kind of spread like hummus or cream cheese,  mushrooms(I like baby bellas for this) and optional onion.
 Sauté sliced mushrooms and onions in pan over medium high heat with some water or olive oil. I used the whole  package of mushrooms and a 1/4 of a large red onion, thinly sliced.
 Add seasonings-these are the ones I used but if you don't have them-salt, pepper and garlic powder are perfect.
 Cook until mushrooms are well done and onions are carmelized.
 Toast your bread. I used Dave's Killer Bread. Ezekial is really good too. Grab your spread of choice (hummus, cream cheese or both).
 Spread a think layer of hummus or cream cheese on the toast.
 Top with mushroom/onion mixture and add some Everything But the Bagel Seasoning if you have it.
Here it is with cream cheese - crunchy, creamy and comforting.  Enjoy!  Which would be your favorite? Are you a mushroom lover or the opposite?

{Travel} Boston/College Pick Up & FENWAY

We finally got to go to a Red Sox game in Boston and it was so fun!
 It was time to pick up College Girl but we made a slight detour on the way to stop at Three Girls Vegan in Guilford, Connecticut.
 Some of the goodies in their display case....
 If we weren't heading to a hotel I would have stocked up on some of these amazing looking sauces and cheeses.

Instead we ordered some items from the weekly menu for lunch and some to take to College Girl.
This was a Buffalo Chk-n Sandwich on a pretzel roll with tempeh bacon and fried pickles. Oh my!
 Enough about delicious vegan food, we couldn't wait to meet up with our girl.  We were able to get her mostly packed up and moved out and then we went down to the harbor.  #nevergetsold
Stopped in for a drink at Quincy Market...and later had a great dinner at Lolitas.
We were up for a nice long walk back to campus.

 CG had one more final so we had the day to ourselves and go buy some Red Sox tickets at the ticket office.  How cute is this?
 It's such a festive part of the city. You can do a tour of Fenway which we'll try one of these times. Check out my buddy Tamar's experience here.  We stopped in at the Red Sox store for Mr. Click to get a shirt.   The store is definitely a must visit for all things Red Sox (grab a Red Sox themed photo in the photo booth for an inexpensive souvenir!).

 We had seats in this upper area that were standing room but had bar to lean on (and for your snacks!).
Fenway seemed so tiny and retro. We loved every bit of it!  Another check on our Boston bucket list!

{Recipe Testing} Easy Vegan Mac & Cheese

I love testing out new recipes and this one pot, no cashew, no potato, no blending needed mac & cheese recipe looked so quick and easy, I had to try it!  Find the original recipe here.
 I love that it cooks in one pot! 

  • Add 2 cups of macaroni (or pasta of choice) to a pot along with 3 cups of water, 2 tsp Dijon mustard, 1/2 tsp salt and 1/4-1/2 tsp of garlic.
  • Bring to a light boil so it doesn't stick.  Cook until liquid is absorbed and pasta is cooked, adding more water if it gets too sticky.

  • While the pasta is cooking, whisk together 1/2 cup non dairy milk of choice, 1/3 cup nutritional yeast, 2 TBS tahini and 2 TBS lemon juice.

  • When the pasta is cooked, add the sauce and 1 cup vegan shredded cheese (like Daiya) 

  • Stir until cheese is melted.  Add some freshly ground black pepper to taste. 

Serve and enjoy. (Makes 2-4 servings)
 It really is creamy and dreamy!

Father's Day Weekend & Flowers in New Hope

We started Father's Day weekend with our nephew's graduation on the most beautiful day. 
We also did some shopping and went out for Latin food (and margaritas).
 On Sunday we took a drive and ended up in New Hope.
 It was a really pretty day and the hydrangeas were showing off.
 New Hope looked so good and we couldn't have asked for better weather.
 I just couldn't get enough of the gorgeous gardens.
 It was the perfect day to walk around and New Hope wasn't too busy which was nice.
 We stopped in at the new (to us) Ferry Market  for brunch.
I had this delicious bowl of yumminess (brown rice and zoodles as the base, tofu, fruits, veggies and avocado on top).   I wish I was having that again right now!

New Vegan Finds

Here's a round up of some of my latest vegan finds.
 Violofe's line of dairy free cheeses are amazing! I've been loving the feta version and this parmesan one is killer too!
 I found this mochilce dessert at Trader Joe's.  It's very sweet and creamy.
 This isn't food but it was a new to me candle at TJ's. It smells yummy!
 I found both of these skillet meals at Target and we had them the other night.  Each bag has 2 generous servings and we liked them both!
 This cream cheese is SO good!
 Here's another TJ's find (we had them with the pasta skillet meals the other night).   They are huge and toast up nicely.
 I haven't tried these yet but everything I've had from Kite Hill has been awesome.
I finally found a store that carries the Enlightened Dairy Free Bars and boy are they good!
