Spring Break - A Few Highlights

College Girl was home for Spring Break a few weeks ago.  We stayed close to home, watched a lot of movies, went out for some good food and spent some quality time together.  A few of our highlights:

 This was her first Flyers game!

The rest of the week flew by without any photos being taken. Her sister even came home for the weekend and we got College Girl a flight home a day later to extend her break.  Sweet!

{Recipe} Chickpea Peanut Butter Chocolate Chip Cookies (GF & Vegan)

I've made chickpea cookie dough dip and chickpea blondies but now it's time for chickpea cookies.  Using powdered peanut butter makes them much lower in fat and calories than traditional peanut butter cookies.  They mix up quickly in a food processor and only require a few ingredients.

 Ingredients:

1 15oz can chickpeas, rinsed and drained

2 tsp vanilla extract

1/2 cup + 2 TBS prepared PBFit (or any powdered peanut butter)

1/4 cup light agave syrup

1 tsp baking powder

pinch of salt

1/2 cup vegan chocolate chips (I used Lily's)

 To make:

• Preheat oven to 350F
• Combine all ingredients except chocolate chips in food processor and blend until smooth and creamy
• Mix in chocolate chips and stir to combine
• Drop by spoonfuls onto a parchment lined baking sheet, press down lightly on each cookie
• Bake for 10-12 minutes until lightly browned. They will be gooey and fragile when they are warm.
• Let cool and store in the fridge (they firm up when chilled)

 Enjoy these sweet little, protein packed treats!

Quickest Fix Ever

This has got to be my quickest DIY ever. 

If you recall our recent Powder Room Makeover, we updated the room with oil rubbed bronze fixtures.  The toilet paper holder got an upgrade too but the screw that was holding it together was silver. See photo above.  (Please ignore the odd angle I took the photo at, you can see below that it hangs horizontally).

 

A little black Sharpie later and now I don't even notice it!

Things Loved Lately

Here are some things that I've been loving lately.

This Aztec Secret Indian Healing Clay Mask is something I've added to my weekly routine. I had seen it recommended on a few blogs and decided to give it a try (later I found the my daughter had been using it way before I discovered it).    You mix the powdered clay with apple cider vinegar (or water) and smooth it all over your face, wait a few minutes while it dries and then rinse off. While it dries you can feel it gently pulling your skin(hopefully cleaning out pores). It leaves my skin super soft and a bit red but the redness goes away quickly.

My BS(brilliant sister) recommended this book to me and I loved it.  Tara Westover's story is fascinating. She was raised by Mormon survivalists in the mountains of Idaho who didn't believe in public education, doctors or hospitals but graduated from some of the most prestigious colleges in the world.  You can read more about it here.

I don't know how I stumbled across this movie Juliet, Naked but I'm so glad I did.  It's quirky, cute, romantic and funny.  Just like the review says,  "Warm, smart and funny. It's just charming!

I sent the SLEEPY shower gel and body lotion  from Lush to City Girl for Valentine's Day and she told me how much she loved them. I had to try them for myself. The light lavender scent is sooooo yummy!

Two, new to me finds from Costco.  College Girl spotted the Azuma Gourmet Seaweed Salad when she was home for break. It tastes just like what you find in a Japanese restaurant.  I was also stoked to find shelf stable Kirkland Organic Unsweetened Vanilla Almond Milk at my Costco.

{Photography} Snowy Spring Break Photo Shoot

Happy first full day of Spring!  When College Girl was home for her Spring Break a few weeks ago, we had a snow day and decided to do a photo shoot.

It was so much fun to get back out and take photos again. It had been too long!

{Recipe} Lentil Oat Berry Bake

Lentils for breakfast might sound a bit strange (but not to me because I prefer savory breakfasts most of the time) but give this one a chance.  You don't taste the lentils but they add a nice pop of protein to this sweet bake.

Ingredients:

2/3 cup dried red lentils

2 cups rolled oats (not instant)

2 2/3 cup unsweetened almond milk (or milk of choice)

1 tsp cinnamon

1/4 cup sweetener of choice (or more depending on how sweet you want it)

4 cups frozen berries 

To make: 

• Soak the dried lentils and oats with the almond milk, cinnamon and sweetener overnight in the fridge in a covered container
• In the morning, preheat oven to 375F
• Add 4 cups of frozen berries to a 9 x 9 baking dish
• Pour the lentil/oat mixture over the berries. Sprinkle a little more cinnamon on top if you like
• Bake for 45 minutes or until the top is golden brown and the fruit is bubbling
• Let cool before serving (makes 9 servings)

Store leftovers in the fridge.  This is delicious warm or cold.   Add some maple syrup to a warm piece of the bake and enjoy!

It also makes a nice evening snack or dessert with a bit of whipped topping.

{The Abode} Powder Room Reveal

We are finally done our first floor powder room makeover!!   

We started with this post: {The Abode} Powder Room Update-The Plan

and this was the BEFORE...

I could not wait to get rid of this sink but we needed a professional to move the plumbing and install the new vanity.

Ta da!! Once that was done it was time to paint and add accessories.

The paint color (Benjamin Moore's Buxton Blue) made such a difference in the room.  It's hard to photograph because the powder room is teeny tiny (5ft x 4 1/2 ft)!

We updated the shelving unit as well.  This is what we had before...

...and AFTER!  The open shelves make the room feel bigger.

 I found the mirror at Kirkland's because the one I found here was too big.

We updated all of the other fixtures like the switch plate, outlet cover, toilet paper holder, floor grate and towel ring.

 Take a look at this beauty!  I have so much more storage now!

 The hand towels are from Target and soap dispenser is from Amazon.

 I will have fun styling and restyling the shelves!
