Graduation Weekend in NYC

We had busy weekend in NYC when City Girl #1 graduated.

This was my outfit for heading into the city.

We stayed at the same Midtown Hilton as our last NYC overnight trip and had a nice lunch in the lobby bar.

We snapped some pictures before the awards ceremony.

There was a reception for the award recipients and families after the ceremony.

We didn't stay too long because we had dinner reservations at Shuka. It was so good!

The next day we enjoyed some breakfast in the executive lounge.

We had an open morning so we walked around and went through Bryant Park.

Then we walked to Central Park and decided to go to the zoo. We've never been there and it was so nice to have the time to check it out.

It was definitely fun to see the animals interacting.

They were pretty active that morning.

Her school's graduation was held at Madison Square Garden.  How cool!

Graduation Week

I've been putting off this post because I have so many photos and so few words but here goes!   We spent a week in Boston celebrating College Girl back in May.

We drove up and went straight to her first ceremony for her individual college.

Celebrating her first graduation of the week!  We actually got to hear her name and see her walk across the stage to accept her diploma.

We hit up the hospitality hub after the ceremony with the other families.  There were tasty refreshments and lots of fun photo ops.

Walking home with our grad.  I had to get some of those beautiful flowering trees in the shot.

We changed into comfy clothes and met up with her for dinner in our hotel.

We got up early and went on campus to take some of her graduation photos.

We walked around campus, finding all of the prime photo spots.

   We had brunch at Tatte one day.

We had dinner in Seaport when City Girl got into town.

Dinner at Lolita.  Always a treat!

{Photography} College Graduate

 I got to shoot my gorgeous and talented niece's college graduation photos recently.Like other 2020 graduates, she didn't have the final year that she expected or an in- person graduation but we could still celebrate her achievements.

A pretty park and a cap and gown on (another) warm summer day and we were set.

This is one of my favorites from the shoot.

{Recipe} Chocolate Peanut Butter Pretzel Ritz Bars-VEGAN!

What a perfect combo of sweet and salty. I veganized these treats for our 80's Inspired Graduation Party and made them again for a friend's birthday a few weeks later.  They are that good. These bars are perfect for summer because they are no-bake and super easy to throw together.

 Ingredients:

3/4 cup (1 1/2 sticks) butter, melted (I used Earth Balance buttery sticks)

1 cup pretzels, crushed finely then measured

1 cup Ritz crackers, finely crushed

1 1/2 cups powdered sugar

1 cup crunchy peanut butter

1/2 cup creamy peanut butter

1 1/2 cups chocolate chips (use dairy free if making vegan)

Mini pretzels for decoration (optional)

To make:

• Line a 9 x 13 baking pan with parchment paper.
• Crush pretzels and Ritz in food processor (or in a plastic bag with a rolling pin) then measure to make sure you have 1 cup of each.
• Combine melted butter, crushed pretzels, crushed Ritz, powdered sugar and crunchy peanut butter in a bowl.

•  Press mixture into the baking dish.

• In a small bowl melt chocolate chips and creamy peanut butter in the microwave in 30 second intervals, stirring in between intervals until fully melted.

•  Pour over peanut butter cracker mixture and spread out to smooth the top.

• Add mini pretzels to the top (optional).
• Refrigerate for at least one hour before cutting into squares.
• Store in refrigerator in an airtight container.

 These are similar to my No-Bake Reese's Bars but have a softer texture plus the addition of pretzels and Ritz crackers.

The combination of the crunchy peanut butter and salty pretzels/crackers with the sweetness of the sugar is so amazing. The creamy chocolate peanut butter topping is divine!
