{Get Thrifty} Thursday

It's been quite some time since I shared a Get Thrifty Thursday post!
Once Goodwill reopened  College Girl and I took a trip to check it out.  I ended up with a few things and luckily they all fit once I got them home, washed them and tried them on.  Here's how I've worn them so far.
I wore this cute polka dot top to work with some olive joggers.
The striped top was perfect over some white shorts.
I threw the dark olive sweater over a tank top with some shorts.
I was hoping I could use the floral robe as a kimono top.  I tried it on with my new Target overalls...
...and with some shorts.  I still need to cut off the ties and belt loops but what do you think? Can I get away with it as a kimono or should I just keep it as a robe?
I also snagged a tiny white pitcher. I'm sure it will show up in some of my future recipe posts.  Have you been thrifting lately?

{Recipe} Perfect Veggie Bean Balls

I've always eaten pre-made veggie meatballs but never found a foolproof recipe to make them... 
Until now!   I used this recipe from Hummusapien and followed it pretty closely.
1 TBS ground flax seed/3 TBS water
1/2 cup chopped walnuts
8 oz sliced mushrooms  (I used baby bellas)
3 large cloves garlic
1/2 medium onion, sliced
15 oz can pinto beans or chickpeas, drained and rinsed (I used pinto)
1TBS Italian seasoning
2TBS nutritional yeast
3/4 tsp salt
freshly ground black pepper to taste
3/4 breadcrumbs (I used plain panko)

To make:
  • Preheat oven to 350ºF. Place walnuts and mushrooms on lined baking sheet, bake for 10 minutes. Remove from oven and leave oven on.

  • Combine flax seed and water in small bowl, set aside. 

  • Place onion and garlic in food processor, pulse a few times until chopped.

  • Add beans, Italian seasoning, nutritional yeast, salt, pepper, cooked mushrooms and walnuts (it's ok that they are still hot). 

  •  Pulse a few times until everything is chopped and mixture holds together. 

  • There should be some texture and not totally pureed. 

  • Put mixture into a large bowl and stir in flax mixture and breadcrumbs. 

  • Roll mixture into 20 balls. Place on lined baking sheet and bake for 20 minutes. 

  • Flip and bake another 20 minutes. 

  • I topped ours with homemade marinara sauce and some vegan parmesan. 

  • So good!  They would be great in a sub too.

I also tried the mixture as a meatloaf and it was good but the bean balls are better.

4th of July 2020 Style

We had a quiet 4th of July this year but it was still a good one.
There was a small bbq with a few family members. It was a hot one but we stayed outside.
 I tried some of this sparkling hard seltzer from Trader Joe's.  It's a good one!
 We were home early and had a relaxing rest of the day.  The moon was gorgeous that night.
 We were lucky because our neighbors put on an amazing fireworks show.
 We have the best view from our driveway!
 It was a perfect ending to our day.
The next day I made rice paper bacon from this recipe and we had delicious BLT's.  How was your 4th?

Some Target Finds

I'm still not  comfortable hitting the stores in person (and you can't try anything on anyway) so online shopping has been my jam lately. to the rescue with some cute finds.
First off is this pair of square neck overalls..   The fabric is super light and breezy (linen and rayon) and keeps me cool and comfy. I love the tie belt for giving it some shape.
It works with different tops but this is the one I've been wearing it with it most often.

Speaking of tops, I grabbed two of these long sleeved ribbed t-shirts.  One is this light blue color and the other in...
hematite.   It's been way too warm to wear these lately so I don't have any pics of me in them but I tried them on the fabric is soft and stretchy. I have another Universal Thread long sleeved t-shirt that I wear on repeat so I know I'll love these two as well.

{Recipe} Vegan Chocolate Chocolate Chip Cheesecake Pie-EASY

I had a graham cracker crust  languishing in the pantry and wanted to use it. Something cool and chocolate-y sounded good and if it were a no-bake recipe, even better!
 I was inspired by this recipe for the filling.

1 graham cracker crust (usually vegan but check ingredients if concerned)
3/4-1 cup raw cashews, soaked and drained
1 TBS fresh lemon juice
1/8 cup melted coconut oil
1-1 1/2 cups non dairy milk
5 ounces dairy free dark chocolate, melted
1/8-1/4 cup agave or maple syrup 

1/4 cup chocolate chips (optional)

To make:
  • Into a high speed blender add all of the filling ingredients from cashews to agave. 
  • Mix until very smooth, start with 1 cup of non dairy milk, adding more if necessary and scraping down the sides of the blender.
  • Pour filling into graham cracker crust.
  • Sprinkle chocolate chips over top of pie. 
  • Cover with plastic wrap and refrigerate for 4-6 hours (or freeze for 1-2 hours if in a hurry).
  • Top with coconut whipped cream and some additional dark chocolate for added flair when serving.
  • Enjoy!

Enjoying outside by a fire is especially pleasant.

Followed with some rosé and it's a perfect summer night.

Loving Lately

We're halfway through July and summer is flying by. Here's what I've been loving lately.
 Hubby's band doing a driveway concert.  Do you see the rainbow?
 Mourning doves in a nest we could see from our deck.  There's an adult and two babies in there.
 I made this kale salad for a family get together.
 Pool day!
 Enjoying the chiminea on a summer night (we saw fireflies too!).
I've been using this sunscreen and love how it give me a little glow-
 even under my make up.

Summer veggies (zucchini from our garden). I vegan-ized my Summer Vegetable Cobbler.
 On a quick trip to check on City Girl's apartment I noticed these beautiful wildflowers on the side of the road.
 Driving back from Brooklyn.
 Adding some summer touches to the family room and a new candle.
