{Random} Things I Ate & Wore - December Edition

December has come and gone and sure there were lots of Christmas cookies and holiday meals but there were also some other good eats.  I also chose to photograph some of my outfits along the way.
But first, coffee!
 Our neighbors made too many churros (is there such a thing?) and asked if we wanted some hot, fresh, chocolate filled churros. Ummm yes please!?
 Avocado toast has been on pretty constant rotation around here. Or avocado pita in this case. My favorite way to eat it is with tomatoes and hemp seeds.
 I made these Coconut Oil Blueberry Scones with Rosemary for my book club.
 Starbucks cup fail!
 We had some really warm days, tank top walking weather.
 Liking my outfit this day.
 Homemade latkes and Crock Pot Applesauce.
There's that avocado toast again.
I made a big pot of my Vegetarian Italian Wedding No-Chicken Orzo Soup. I thought I had a post for this recipe but I can't find it. Must do this!
 Christmas Eve outfit.  It was way too warm for the sweater dress I was planning to wear.
 We had dinner at Memphis Tap Room when we were on this adventure  and started with beer, of course.
 Our appetizers were Chicken Fried Cauliflower and Hefe-Weizen Hummus Plate (both vegan).
 My dinner was this spaghetti sandwich (lentil meatballs, marinara and vegan mozzarella plus spaghetti, spaghetti IN the sandwich!!!).  So good!

{Get Thrifty} Thursday

I haven't had a Thrifty Thursday post for you in awhile. I really haven't been thrifting much lately but we did have two thrifting adventures over the holiday break.
The first one was with my girls and we went to one of our favorite thrift stores and out to lunch to celebrate the beginning of break.  It's in a big old barn and it's so much fun to explore. There were quite a few vintage pieces in with the clothes and Miss High School fell for this prom dress.  It wasn't a good fit and had some staining on it so we had to pass.
I gave the photo a vintage look for Instagram.  The dressing room has it's own rustic, vintage vibe going on.
I found this funky 70's style top that must have been a dress in another life because College Girl pointed out that it had no hem(but it did have a tag so we know it wasn't home sewn).   I decided to go for it but I still haven't had a chance to wear it. I see a 70's party in my future!
Our other thrifting adventure was to The Resource Exchange in Philly. We've been there before(you can check out our trip here) and it is always an adventure.
No, I didn't buy this Rocky painting that was featured in the movie "Creed" but I thought it was pretty amazing. Also not for sale.  womp womp womp!  
I did buy a few little ditties...a piece of parquet flooring for food photography, two red gingham tablecloths and some old sheet music.  "Love Walked In" is on our piano right now for Valentine's Day.  This place never disappoints, there is always so much to look at.

We also went to dinner at The Memphis Taproom and I was able to grab a quick pic of MHS outside before we went in.

{Random} Wrapping up November

I've been jumping all over the place on the blog lately but I realized I hadn't done an Insta-November post for all of my random Iphone pics.  You may have seen some of them in my Project 365 or if you follow me on Instagram @heather_ourlife but hopefully you'll still indulge me and my tardiness.
 I made lasagna stuffed peppers with veggie sausage and spinach.
 Worked at the high school's campus store. Always fun to see the girls!  (It was a slow day).
 Some birthday treats..new booties and shirt from Anthropologie (bought with  my birthday coupon!).

 I still had the white pumpkins up for fall/Thanksgiving but this little huge guy thought it was still Halloween. #notfake #eeekkk

 She was Linus in her school's production of "You're a Good Man, Charlie Brown". So fun!
I was in charge of senior gifts for the cast and crew as well as the directors' gifts(I had some help with the faces).
 A dessert Mr. Click and I shared, I can't remember what it was but it was chocolatey and delicious.

{Recipe} Vegan BBQ Jackfruit "Pulled Pork" & Avocado Slaw Salad

If you're like me, you probably don't know what jackfruit is.  If you do, you're way ahead of the game.

 I saw this short video and it intrigued me enough to go looking for the stuff. (I'm obsessed with those quick food videos!)**edit** I had the WRONG video up. Now it's the right one! Only 1.10 minutes long!***   My regular supermarkets did not carry jackfruit so I ventured out to an Indian grocery store.
When I asked the store employee  if they carried jackfruit, he asked fresh or frozen? I said "canned"????? and he sent me right to the proper aisle. Shopping in an Indian grocery store is quite the amazing sensory experience! I've been back since and I should do a whole post just about that. You need two 10 ounce cans of green jackfruit in brine (not syrup).  You can also order this online but I think going to the Indian grocery store is way more fun!  Please look away from my zombie thumb!
College Girl was home and she used this recipe for our BBQ Jackfruit.  You can follow along for the specifics on their site if you want to try and make this yourself.  The jackfruit looks like pieces of white pineapple right out of the can.  After draining, rinsing and drying it, cut off the center core pieces.
Saute it up with bbq spices like brown sugar, paprika, garlic powder, etc..
Meanwhile get the ingredients for the avocado slaw ready.
Add in your favorite bbq sauce and keep cooking.
Salt and toast some cashews (optional for topping).
As the jackfruit cooks, you can start shredding it (like pulled pork) with two forks.
Mix up the avocado slaw.
When everything is ready, assemble your salad. We used the slaw as our base, added the bbq jackfruit and topped it with the toasted cashews. Yum.  You can also make sandwiches out of it.
The jackfruit has a similar texture to pulled pork. It has a mild flavor so it picks up whatever flavors you cook it with.  I want to try my old pork roast recipe on it next and also see if I can make it in the crock pot.   Stay tuned....
