{Travel} A Magical Birthday Weekend In New York

Cheers to the weekend! What's happening in your neck of the woods? We woke up to ice coated trees and rain.  I'm thankful it's not buckets of snow! We celebrated City Girl's birthday a few weeks ago in New York City.

We got last minute tickets to Harry Potter and The Cursed Child on Broadway.

The theming carries through everywhere, even out on the street.

The inside of the Lyric Theatre was gorgeous and had lots of interactive areas.

We enjoyed the bar with real glasses!

We were all pretty excited to see this show.

It was captivating and didn't feel like it was three and half hours long.

We headed back to her apartment in Brooklyn but the second train wasn't running so we popped out at Union Square to get an uber. It was FREEZING!  I normally like shopping in Union Square but not today!

It's always a special treat to stay in the city. This time we stayed at The Williamsburg Hotel. 

We had been there before for drinks (and to the rooftop pool deck) but this was our first time staying in this swanky spot.

We met her at the bar for a drink before dinner.

The walk over to Chez Ma Tante was SO cold. I was ready for my first hot toddy.

We had an amazing birthday meal and a great night together.

Our room had a little balcony. I didn't care that it was freezing out, I had to check out the view.

I was obsessed with the tile in the bathroom.  Our room had so many nice touches including a white noise machine next to the bed.

The bar looks so different in the daylight.

I could not stop taking pictures of this hotel.  This spot is so cozy!

We had some coffee and waited for her to meet us at the hotel for breakfast.

The restaurant was so pretty too.  After breakfast it was time to go home but we had the best time in Brooklyn!

{Recipe} Almond Flour Applesauce Muffins

  I had a jar of applesauce languishing in the fridge and a big bag of almond flour that I'm trying to use up and I found this recipe for muffins.  I adjusted it to make it vegan.

Ingredients:

1 cup of applesauce (I used unsweetened)

1/4 cup of maple syrup

1 tsp vanilla

2 tsp apple cider vinegar

1 1/2 cups almond flour

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon+ extra for top

1/2 tsp salt

1/2 apple, diced

To make:

• Preheat oven to 350ºF
• Line muffin tin with liners (or use silicone)
• Mix wet ingredients in large bowl-applesauce, maple syrup, vanilla &vinegar
• Add almond flour, baking powder, baking soda, cinnamon & salt. Stir combine
• Fold in diced apple
• Scoop 3/4 cup of batter into each muffin cup. Sprinkle tops with cinnamon
• Bake for 25-35 minutes or until tops are golden brown

Because I left out the eggs and oil and increased the amount of applesauce, these did not hold together as well as traditional muffins but they firmed up in the fridge and were really tasty!  College Girl made the original recipe as written with chocolate chips and said they turned out great as well! Options!

Weekend Doings

We had some Groupon dates from Christmas and used a couple of them one Saturday. It was the same weekend we were painting our basement banisters and cabinet.

First we went out for a lunch of Mexican food at a new-to-us place.

After lunch we went to a flight and pint deal at a local brewery.   It was fun trying their different ales.  

We walked around the cute town for awhile after the tasting.

On Sunday we drove to the beach and had a lovely brunch.  Look how they served their coffee and lattes.

Everything on the menu was vegan so I had a hard time choosing what to get. I got the big breakfast and we shared that.

We checked out this fun vintage store and took a walk along the beach.   It was a perfect weekend!

Tiny Updates-Big Impact: Basement Banisters & Cabinet

This was one of the quickest DIY's we've done and it's made such a big impact (to us at least!).  After our flood last year and updating our basement flooring, we wanted to give the banisters and snack center cabinet a little makeover too.

We had painted our main staircase banister back in 2016 and knew we loved the look.

I unknowingly picked the exact same black paint color from Lowe's-- Tricorn Black--for the basement. Sometimes it's good to have this blog to look back on things!  I barely got a before picture before Mr. Click had removed the top railing and prepped the staircase.

We LOVE it!

I didn't even take a BEFORE shot of the snack center but I had one from this post when we updated our light fixture.

Here's the AFTER!  The oak was looking a little dated and now it's fresh and chic.

Again, what took us so long--all it took was a quart of paint and a few hours on a Saturday.
