{Summer Dinners} Creamy Pasta Florentine-Vegan

I definitely need to shake up our dinner routine because we get into a rut and are always making and eating the same things.  I thought I'd start a summer dinner series and try a new recipe every week or so and share it with you.

The creamy sauce is made from soaked cashews and fresh lemon juice blended together.  The rest of the recipe comes together quickly by saut√©eing onion and garlic then splashing  in some white wine for flavor.  After that, fresh spinach is added in with the sauce and it thickens up as it cooks.  Served over pasta and garnished with some basil, this dish is really creamy, delicious and summery.  What's your favorite summer dinner?
