{Travel} Riviera Maya Mexico Trip~Day 1

Mr. Click and I had a trip planned to Mexico in November. After we made an offer on our new house, we decided our time would be better served getting our current house ready for sale. The trip was postponed but we got to take it in April.  

This time we tried a new resort called Margaritaville Island Reserve Riviera Maya - Adults Only.  

Here I am figuring out my travel outfit. These were my options and I'm glad I went with my new olive pants from Costco.  They were perfect for traveling.

When we got to the resort they gave us margarita flavored popsicles (they melted very quickly but were a nice touch!)

The resort smelled lovely and had a gorgeous indoor/outdoor vibe.

I loved the convenience of having our room key on a bracelet.

Our room wasn't ready so we went to lunch and had to try the 'tin can nachos'(watch video to see).

Mr. Click got a "cheeseburger in paradise" at Landshark Brewery & Grill.  

We checked into our room and settled in. I loved how light and bright it was.

We had our own little margarita making station and some homemade chocolate treats.

This bathroom had a fantastic shower!  The theming was very aquatic, there were even mermaid tail faucets.

We opted for a garden room that was super lush and private. I appreciated the clever details like this drying rack.

It was such a peaceful place to hang out for morning coffee or a book on the hammock.

But we had pool plans so we did a quick change and headed to the pool.

First we made a quick stop at Joe Merchant's.  It's a convenience store and coffee shop all in one. Instead of a mini bar in our room, we had points to spend at the store (coffee and food from the coffee shop were free).

It was later in the day and it looked like we had the place to ourselves.

There actually were a few people enjoying the pool with us.

All dressed for dinner!

We had dinner and afterwards we walked around the resort as it got super windy. 

We called it an early night.  Travel day is always exhausting!

{Shopping} Aldi Finds for Spring 🌿

I've been going (frequently!) to our new Aldi and scoring some really good finds.

The "aisle of shame" always gets me!  I ended up returning the lantern but it was pretty cool. I just didn't have a place for it.

The carbs!!  I love their English muffins but the sandwich skinnys are a little too thin. The Woven Crackers are a good Triscuit dupe. The ciabatta rolls are very good and comparable to the Coscto versions.

Dairy items-the ice cream bars were just ok. I like the medium cheddar slices a lot, especially on a veggie burger!  The chive and onion cream cheese was pretty good. I like this mozarella but hadn't had the pesto one yet. It comes pre-sliced so it's perfect on a pizza or salad.

Produce items-Sometimes they aren't the best at Aldi,  but this batch was very good. I didn't need a full bag of lemons so I asked someone in the parking lot if they wanted some. They did!

Fiesta night!  Lots of goodies here!

I bought myself a kombucha as a treat for the drive home.  I'm saving the strawberries for my Strawberry Crunch Cake.  A pineapple sounded good and it was.

It's good to have an easy meal option on hand for dinner emergencies.

I was out of my TJ's favorite dressings and this one was a good stand-in.  I like this cheese too.

More aisle of shame goodies. We needed a new grill cover and I also picked up some grill mats. They have been working out well.

This cute sherpa ottoman came home with me too. I love it!  Have you scored any good deals at Aldi lately?

{Soup Series} Creamy Dairy-Free Broccoli Soup

I had a craving for cream of broccoli soup but put my own spin on it to make it dairy free and full of veggies.

Ingredients:

1/2 cup raw cashews

1 TBS extra virgin olive oil

6 cups water, divided. 

1 medium onion, chopped

3 medium carrots, chopped

3 stalks of celery, chopped

3 cloves of garlic, minced

7 cups broccoli florets,chopped

2 TBS lemon juice

1-2 tsp salt

freshly ground black pepper

1/3 cup nutritional yeast (optional)

To make:

• Soak cashews in a bowl of hot water for 30 minutes.
• Add oil to a large pot or Dutch oven on medium heat.  Once hot, add onion and sauté for about 3 minutes.  Add celery and carrots and sauté for another 5 minutes.
• Add 5 cups of water, salt and pepper. Stir and bring to a boil.  Once boiling, reduce heat to low and simmer, covered for 15 minutes.
• Drain cashews and add to high speed blender with 1 cup of water.  Blend until very smooth. Add to soup.
• Puree soup usin gand immersion blender.  I leave it a little chunky.  Season with some lemon juice and adjust for salt & pepper.  Add nutritional yeast and stir to combine. Serve & enjoy!

Lotso-Costco Finds!

We've been hitting up our new Costco a lot lately.  We always find surprise items that are too good to pass up and we've ordered a few things online as well.

They've had some really cute clothes lately and I got a new pair of cuffed white jeans. My last pair had seen better days and didn't make the move so it was perfect timing.

It was time for some new jammies (the Christmas ones were getting tired) and I love how soft this Minnie Mouse pair is.

We stocked up on sunscreen.

I think this Mrs. Meyers hand soap set is such a good deal. The bottles are larger than what I've found in other stores and I love their scents.

Speaking of cute clothes, I also picked up some olive drawstring pants.

I was tempted to get the black ones too.. They were perfect for traveling to Mexico. Light and breezy!

I was also tempted by these sweatshirts but I refrained!

We needed new furniture for our family room and ordered this Thomasville Tisdale sectional and storage ottoman set.  It can be configured in 5 different ways so it gives us a lot of options including a bed for overnight guests.

We also needed to replace a tv and I knew I wanted a Samsung Frame tv this time. Costco had a great deal on them (online).

Our outdoor seating area was calling for a bigger rug and we've loved our other outdoor rug from Costco so it was an easy decision to get another one. This navy and white pattern is fun.

Another outdoor update-we found some nice outdoor string lights for our patio.

We really lack outdoor storage so we purchased our first ever shed.  It took a few hours to put together but is totally worth the sweat equity.

We've been saying we want to try pickle ball so we got a pickle ball set. Still haven't tried it yet... Do you play?

We got a few more beach chairs for some future trips to the beach. 

I almost forgot about this faucet!  We upgraded to a new matte black Kohler Bevin Faucet for our kitchen sink.
