{Recipe} Protein Packed Twice Baked Potatoes - Revisited

I posted this recipe two years ago but only linked it to the original recipe. I've changed it up a little and wanted to share the updated recipe.
These hearty twice baked potatoes are full of plant based protein (lentils are snuck in along with creamy roasted cauliflower). They are "fancy" enough for a special occasion but also great on a weeknight, as long as you have a batch of my Vegan Cannellini Bean Sour Cream on hand (you could  also sub any vegan sour cream or plain non dairy yogurt).
Ingredients
4 large baking potatoes, halved lengthwise
3/4 cup red lentils, rinsed and picked over
1 1/2 cups vegan cannellini bean sour cream,  divided
1 head cauliflower broken into florets
1/2 onion, chopped
3 cloves garlic, minced
1 tsp salt
2 1/2 cups vegetable broth
1/2 cup chopped scallions
1/4-1/2 cup vegan bacon bits(optional)*I used McCormick brand)

To make:
  • Preheat oven to 400ºF
  • Place potatoes cut side down on parchment lined baking sheet
  • Place cauliflower florets on another parchment lined baking sheet (drizzle with olive oil-optional)
  • Roast potatoes and cauliflower for 30 minutes.  Remove cauliflower from oven. The potatoes will need more time if they are large
  • In the meantime, sauté onions and garlic in some water for 5 minutes in a medium saucepan, over  medium-low heat. Add lentils, salt and broth. Bring to a boil and let simmer 15-20 minutes until lentils are tender and broth is absorbed. Remove to a large mixing bowl and let cool
  • When the cauliflower is finished cooking, add it to the bowl with the lentils Add one cup of cannellini bean sour cream, reserve remaining 1/2 cup of sour cream
  • When the potatoes are cooked, let them cool enough to handle and then scoop the flesh into the mixing bowl. Try and leave 1/4" thickness of potato in the skins
  • Roughly mash lentils, cauliflower, sour cream and potato mixture until combined. Season with salt and pepper to taste.  Add half of the bacon bits (if using)
  • Stuff the potato halves with the mixture and bake for 10 minutes at 400ºF
  • Broil the tops for 1-2 minutes to brown them
  • Garnish each half with sour cream, bacon bits and scallions
Enjoy!!

{Travel} NYC Birthday Weekend

We headed to NYC to visit City Girl  for her birthday.
We  stayed at the super chic Conrad Hotel Midtown.
The room  had so many cool design features.

It felt like our own swanky little city apartment.
This was an over the top mini bar area.
We  even had a foyer (in our room!)!
The bathroom was swoon-worthy.

The views from our room were pretty spectacular too.
We checked out the on site restaurant for a little snack and vino.
This was my $12 salad. #tiny
Getting ready for our night out. I'm wearing the top from this post.   We met  up with City Girl and her very hip office and she gave us a tour which was really fun.  We had a nice Italian dinner at Cielo at The Mayfair before heading to the show.
We got to see Dear Evan Hansen.
I've missed seeing Broadway shows!

This one was so good!

This sculpture was in the lobby of our hotel.
We met up at the hotel the next morning and walked to brunch at Westville in Hells Kitchen,
This veggie burger was DELISH!
It was very cold in NYC that weekend so an indoor activity was definitely on the agenda.
We went to the Guggenheim Museum (our first time!). They were working on a new exhibit so part of the museum was closed but we still managed to see a lot of amazing art!
I found this shot on my camera roll and I love it!
I'm so glad we got to visit!
After the museum (and lots of walking) we stopped for coffee and a much needed break. I could sit by the window and "people watch" all day!
We visited Strand Bookstore (always a favorite stop).
We went back to the hotel to get our bags and made a stop at a bar for some snacks and drinks before we had to head home. Then it was time to walk to the train station and go home. It  was such a great weekend in NYC!

{Photography} Philly Head Shot Photo Session

I was thrilled to get to shoot headshots for this lovely lady.
She's embarking on a new career and needed headshots that reflected her new role.
It was a very chilly morning in Philly so we shot as quickly as possible.
You might remember her from her Milestone Birthday shoot or...
this super fun Save The Date/ Engagement Session. I'm so grateful she wanted to hire me again!
