{Recipe} Protein Packed Twice Baked Potatoes

Happy Friday! I'm pretty happy that I made it through this extra busy week and was able to get four posts up!  Here's another new to me recipe that I tried in hopes of getting out of our dinner rut. 
Like the title says, it's packed with protein=20 grams to be exact. It sneaks in extra protein with red lentils, roasted cauliflower and of course the star of the recipe--potatoes!  They do have a nice amount of protein too.
I served these as a main dish and used fairly large potatoes.  The only change I made to the recipe was using my Cannellini Bean Sour Cream instead of the savory cashew cream so my recipe has even more protein and less fat.
I also made the tofu bacon recommended in the recipe and while it's not 'real' bacon by any stretch, I thought it had the notes of bacon and it got better the longer it sat in the fridge (great for snacking!). 
I grabbed a screen shot of the bacon sizzling on my griddle.  I topped the potatoes with tofu bacon bits, scallions and a little of my sour cream.
