{Recipe} Cannellini Bean, Couscous & Spinach Soup

 This is my take on Julie's amazing Kale, Bean & Mushroom Soup.  I use my blog as a recipe index and wanted to have my version for easy reference.

I made it the other night and it was a hit again!

Ingredients:
(serves 6-8)
1 cup diced carrots
1/2 cup diced onions
2 TBS butter
4 cloves garlic, minced
1/4 tsp red pepper flakes (more or less to taste)
2 cans cannellini beans & their liquid
5 oz Israeli pearled couscous
4 cups veggie broth
4 cups water
1 tsp oregano

8-12 oz baby spinach, roughly chopped (can sub chopped kale)
salt & pepper to taste

1 cup shredded mozzarella cheese (for topping)

To make:
  • Melt butter in large soup pot, add carrots and onions and cook until onions are translucent
  • Add minced garlic and red pepper flakes, cook a few minutes being careful not to burn the garlic
  • Add cannellini beans and their liquid, couscous, vegetable broth, water and oregano to the pot, stir to combine
  • Bring to a boil and then simmer on low for 30 minutes until couscous is cooked
  • Add baby spinach. Cover pot and let the spinach wilt for a few minutes, stirring to combine it all
  • Add salt and pepper to taste
Serve with grated mozzarella cheese on top.  Enjoy!!

{Thrifting} Thrifting Lately-A Little Bit of Everything

I've discovered a few more local thrift stores and have been finding some really good treasures.

I found this new cat dish and wasn't sure if I'd use it for decoration or for feeding my grand kitties.

I started a thrifting list and a small dish for our guest bathroom was one of the items I was looking for and found! 

City Girl 2  asked me to look for whale art and decor for her apartment and I snagged two of these whale plates for her.

I didn't know so many cute cat dishes existed but I found this lot at Goodwill and couldn't resist.
These bowls are so much cuter than the plastic ones I was using for the grand kitties.
I also found this stein for a family member.
Another day I found a sweater, some dressy shorts and a blue floral pitcher.
I ended up returning the sweater because it was too cropped but I like the shorts and the pitcher looks great in our kitchen.

Another item on my thrifting list was a pair of blue and white striped "beachy" pants.  This pair of Talbots chinos fit the bill (and me!). I also loved this wicker wrapped vase and was hoping I could pull the fake flowers out of it.

I really scored with some Eagles merch at a Salvation Army store.

I also found this festive Phillies t-shirt for Mr. Click awhile ago but don't think it made the blog.
I'm a sucker for stripes and I loved this Universal Thread green and white button down.
I wore it with the (borrowed)Phillies t-shirt for a St. Patrick's Day Parade last weekend.
I didn't buy this but it cracked me up and I had to send a photo of it to City Girl 1 and to my sister who are both avid knitters.
This was another item I didn't buy because I don't like scented taper candles, even when my name is on them.

Costco Products That Have Stood The Test of Time

I do a lot of Costco posts and thought it would be interesting to see which products have stood the test of time.
We still love this Shark vacuum that we bought in 2022 and we also got our daughter a Shark stick vacuum.
We got these Produce Keepers in 2023 and we've only lost one along the way. I use them for storing cut veggies in the fridge.
We've had this set of glass Snapware containers since 2018 and still love them! We bought a set for our daughter as well and she loves them too.

We got our first set of the square OXO airtight cannisters back in 2016 and are still using many of them.   We did a pantry re-organization back then and you can read about it in this post.

We've gotten a few indoor/outdoor rugs from Costco and they hold up really well.
We got this doormat back in 2023 and still use it at our new house.
We just got this faucet last year for the new house but we still love it.
We also purchased these outdoor lights for our new house and love them.






I've had this T3 curling iron for a long time and it's still a favorite.


We purchased this Cuisinart set of knives for our daughter first and then upgraded our knives with them in 2023 as well.
I really like the quality of Costco clothes.  I still have these shorts and joggers in a few colors.
I got this 10 pack of PUMA socks in 2021 and still have some of them!
We purchased two of the Tommy Bahama beach chairs in 2021 and bought another pair last year.
We upgraded to this beach cart in 2023.

We got this set of towels in 2021 and are still using them.
We got this washer/dryer combo for the new house and it's featured in this post.  I really love that the controls are in the middle of the unit.
We LOVE our Samsung Frame tv and wouldn't hesitate to get another one if we needed one.
The Tisdale sectional is another purchase for the new house and we really like it's versatility and comfy-ness!

I haven't even gotten into the food and other homegoods that we buy on a regular basis but that might be for another post.

{Shopping} Trader Joe's Small Haul

This was our TJ's haul from a few weeks ago. I'm due for another trip!
Produce:
Avocado Ranch Salad Kit-one of my faves-we had this at our Super Bowl party
Sumo oranges-these were amazing!
Organic Brussels Sprouts-a staple
Cole Slaw Mix-for mixing into salads & tacos
One Apple-it looked good!
Vegan Creamy Dill Dressing-my fave!
Pitted Medjool Dates-so soft and dreamy-I made this Viral DateSnickers Bark with them
Breads and Fridge Items:
Garlic and Herb Pizza Dough-I like to keep this in the freezer for pizza cravings
Sourdough Bread-the BEST
Shredded Organic Mozzarella Cheese-also for pizza cravings
Beefless Ground-another staple
Hard Boiled Eggs-I like this 6 pack of hb eggs
Frozen Foods:
Roasted Corn
Fire Roasted Bell Peppers & Onions 
Turkey Meatballs
All Staples!
Pantry Items:
Squiggly Noodles, Peppermint Tea & Biotin are all staples
Cookies & Créme Pretzel Slims-*New* to me and SO good!
Bevvies:
Non Dairy Oat Creamer-back on this train
Sparkling Plain Waters-perfect bubbles
Soy Milk-another staple
