Lentils for breakfast might sound a bit strange (but not to me because I prefer savory breakfasts most of the time) but give this one a chance. You don't taste the lentils but they add a nice pop of protein to this sweet bake.
Ingredients:
2/3 cup dried red lentils
2 cups rolled oats (not instant)
2 2/3 cup unsweetened almond milk (or milk of choice)
1 tsp cinnamon
1/4 cup sweetener of choice (or more depending on how sweet you want it)
4 cups frozen berries

To make:
- Soak the dried lentils and oats with the almond milk, cinnamon and sweetener overnight in the fridge in a covered container
- In the morning, preheat oven to 375F
- Add 4 cups of frozen berries to a 9 x 9 baking dish
- Pour the lentil/oat mixture over the berries. Sprinkle a little more cinnamon on top if you like
- Bake for 45 minutes or until the top is golden brown and the fruit is bubbling
- Let cool before serving (makes 9 servings)
Store leftovers in the fridge. This is delicious warm or cold. Add some maple syrup to a warm piece of the bake and enjoy!
It also makes a nice evening snack or dessert with a bit of whipped topping.
