{Recipe} Vegan (American Style) Goulash

How are you doing on Week 3 (or 4) of quarantine?  I've been cooking a lot and some meals have been more elaborate and "fancy" since I have more time to cook.  But I also feel like all I'm doing is cooking and doing dishes so a one pot meal like this Vegan Goulash is a welcome dish.

It comes together with simple (mostly pantry) ingredients and is forgiving and flexible (feel free to sub in your choice of protein- I used Trader Joe's Beefless Ground), mix up the veggies and pasta. It still comes out perfectly!

Ingredients:
1 medium onion, diced
1-2 bell peppers, diced 
2 cloves of garlic, minced
1 package beefless crumbles (like Trader Joe's brand)
1 28 oz can diced tomatoes
2 cups spaghetti sauce
1 1/2 tsp each dried oregano, paprika, basil
1 tsp salt
2 bay leaves
3 1/2- 4 cups water or vegetable broth
2 cups dried pasta (about 8 oz)
1/4 tsp red pepper flakes  (optional)
freshly ground black pepper to taste


To make:


  • Heat a little bit of water or oil in large pot over medium heat.  Add onions and peppers.
  • Sauté onions and peppers, for a few minutes then add the beefless crumbles.  
  • Continue cooking for 5-7 minutes, breaking up the crumbles.
  • Add garlic and cook a few minutes more.
  • Add tomatoes, spaghetti sauce, spices and water/broth. Bring to a boil, stir well. Cover and simmer for 15 minutes
  • Add pasta and cook for 10 minutes or until pasta is tender, check and stir often to make sure pasta doesn't stick to the bottom of the pot.
  • When pasta is done and most of the liquid is absorbed, taste and adjust seasoning if necessary.
  • Serve and enjoy!  Serves 4-6.

Quarantine Times - What We're Up To

Since we've been self isolating as much as possible for the last few weeks,  here's what we've been up to.
I find meditation so helpful for calming an anxious mind. This particular one from Insight Timer is timely too.  Insight Timer is a free app and you can search  for this immunity boosting meditation if you're interested.
We've done a couple of Zoom happy hours with friends and family.   I've taken some live stream yoga classes from my studio on Zoom too.
My girls have been painting.
We've been  hiking in the park- social distancing of course.
Taking walks after dinner every night  in the neighborhood.
My favorite tree is in bloom right now.
We've got some more daffodils too!
I entertain myself and try to surprise my family.
Love  seeing the forsythia in bloom.
Spending some more time out here in the evenings.
Our first fire of the season on the deck (a little 'champs' too).
Bringing the outside in and appreciating the little things.

A Different Kind of St. Patrick's Day

This year we had a different kind of St. Patrick's Day.  
 In past years we've hosted Irish Nights and we were thinking of hosting one this year but obviously that couldn't happen. 

 I still made Shepherd's Pie (but no green beer!).
Mr. Click tried his hand at Irish Soda Bread and he did a great job!  We had College Girl safely home from Boston and we were so thankful for that.

{Recipe} Broccoli Barley Soup

This soup is made from mostly pantry staples (along with some fresh or frozen broccoli) and would make a great "quarantine" or any time dish.
Shout out to my friend Jessica for this recipe!  This sounded really different from any other soup I had made recently. 

My only adjustment was sautéing the garlic and onion in water instead of olive oil.  I also used 6 cups of vegetable stock.  

Since I didn't  have crushed tomatoes, I pureed a  can of diced tomatoes.  Remember to cook the barley first. (1 cup dry barley in 2 1/2  cups  water=2 cups cooked barley).
The soup is bursting with flavors and textures!
Make sure to season with salt and pepper!
So warm and comforting!
