{Shopping} A Little Holiday Decor

I've been changing up the holiday decor a little around the house and I've been loving shades of blue pumpkins and accents.
 This vase filler set of berries, blue and white pumpkins and cotton blossoms came from Big Lots.
 I also found this doormat there.
 On a trip to Hobby Lobby I found some more items. I'm also obsessed with buffalo check in black and white (or red and white for Christmas).
 The stickers are for College Girl's high school yearbook.
 I found some new pillow covers too!
 I added some mums and a fairy tale pumpkin from Trader Joe's to the front porch.
 The rocking chair pillows got some new buffalo check covers (from Jane.com) and I found the cinnamon broom at Trader Joe's. It makes the porch smell so good!
 The other side of the porch got a few more accents added in as well.
The mantel went from this Back To School theme to....
 a black and white Halloween theme.
I found these fleece scarves at Dollar Tree of all places.
 I wasn't sure what I was going to do with them but when I added the buffalo check scarves to my kitchen table, I loved the look!
 Here's the plate and blue pumpkin from Hobby Lobby.
 The cute acorn salt and pepper shakers were a sweet gift from my bloggy friend Cindy.
 I searched for the perfect fall dish towels to hang on the oven, I wanted them to last through the whole fall season. I love the ones I found at TJ Maxx.

 The letter board got a spooky quote too...do you recognize the reference?
I stopped in a Ikea recently and they were in full on Christmas mode so I took a peek around.
I picked up some wrapping paper and other gift accessories. I'm loving all of the plaid!
I also got two of the plaid pillow covers and I'm using them already because I like how they look in our navy den.

Birthday Weekend and Happenings

Sorry I've been MIA for a few days and haven't been able to blog but I'm back and ready to share my birthday weekend happenings from last weekend.
 They started with some flowers from Mr. Click-I love the fall colors!
This made my mom heart explode to see my girls together in Dublin and having fun.  It was the perfect birthday gift!
 Onto the celebrations...
 We headed into the city for the evening.
 First  stop was dinner at Bar Bombon (a vegan Latin tapas restaurant) and I had their Puerto Rican punch of the day. Everything was delicious and hard to believe it was all vegan. The Spanish meatballs in romensco were fabulous!   We had some time after dinner and did a little shopping and walking around. I used my birthday coupon at Anthropologie!
We walked about 10 blocks (gotta burn off all of that good food!) and  arrived at the Walnut Street Theatre to see Irving Berlin's Holiday Inn,
 I love the movie Holiday Inn so I was excited to see what the musical was all about. The hubs had never seen it so it was all new to him.
 It may sound strange that they were running a holiday show in early October but the show isn't just about the winter holidays and takes us through an entire year.
 There were lots of familiar songs and the staging, cast and costumes (so many costume changes!!) were spectacular!

The fun didn't end there and we went to see A Star Is Born on Saturday night. It was amazing. Who knew Bradley Cooper could sing and he also directed the movie. I see Oscars in their future!!
 The humidity was taking a toll on my hair and I was so ready for a cut and color!
 Soooo much better!
I got a new 'toy' for my birthday and it's a beaut! I'm still getting used to it and that's why I didn't get much blogging done last week.
I ended my birthday weekend with a beautiful restorative Ganesh yoga workshop. Bliss!

First College Care Package


 I think my love language is care packages. I've missed sending college care packages since City Girl graduated but I'm back at it with College Girl.
 She's studying abroad so it's a lot more expensive to ship things to her but it is her birthday month so we made a special one up for her.
 I knew she needed a few things like a travel coffee mug and slippers--the other things I added for fun.
Here's what we put into her box. I rolled the socks up into her slippers and put the peanut butter in the mug, then wrapped that up really well. I put the instant coffee sticks in her travel mug.   We also added two pairs of gloves after she told us how cold it had gotten.
I put some fun wrapping paper on the flaps of the box and packed it all up with her card on top. She had a hand written card from my niece too. I squeezed in as much as I possibly could, it was almost bursting!  It all arrived safely and she loved it!

{Recipe} Testing out the TJ's Eggplant Hummus Copycat


Trader Joe's Eggplant Hummus has a cult following but you can't get it everywhere. 
I was able to find and try it on our trip to Austin but my store doesn't carry it.  I found a copycat recipe and it is so good!  There's a video that accompanies the recipe and it's worth watching to see how she makes it.

You start by scoring and roasting an eggplant. You'll only need a half cup of eggplant so you can save the rest of it for another recipe. In the last 15 minutes of the roasting time add 6 cloves of garlic to the baking sheet and roast that too.
Here are the other ingredients that you need.   Baking powder sounds strange but it makes the hummus airy and fluffy.
Add everything but the pomegranate juice to a food processor or high speed blender.  Set aside.
Heat 1/4 cup of pomegranate juice on the stove, bring to a boil then reduce heat to simmer until most of the liquid has evaporated.

When it's done cooking down, there should be about 1/2 TBS of reduced liquid left.  Add this to the food processor and pulse until smooth.
Looking good!
You could stop and be done right here or...
Add this last step of mixing the hummus up with a hand mixer.
It makes it even more light and fluffy!
Store in an airtight container in the fridge.  It makes twice as much hummus as the package from TJ's.  I don't notice the eggplant flavor very much so even if you're not an eggplant fan, you'll probably like this hummus.
She had some ideas for the extra pomegranate juice too. Make a seltzer and pom mocktail.
