{Recipe} Sheet Pan Chick Pea Fajitas

Sheet pan fajitas where have you been all of my life? 

Roasting up the veggies for fajitas is so much easier in the oven!

 I didn't really use a recipe for this, I saw a few variations of this with chicken but subbed in chick peas.  Spread your fajita veggies (peppers and red onions) out on parchment lined baking sheet. Add one or two cans of drained chick peas.  Toss with a few tablespoons of olive oil(optional).  Sprinkle on your favorite fajita seasonings (I like cumin, cayenne pepper, paprika, garlic powder, onion powder, chili powder, salt & pepper). Toss to coat the veggies.
 Roast in a preheated (400F) oven for about 35-40 minutes, stirring everything around half way through the cooking time.
 Serve in bowls or tortillas.  Add your favorite toppings.
Enjoy!  Clean up is a breeze and I don't think I'll ever go back to pan frying my fajitas!

New (to me!) Trader Joe's Finds

I had another quick trip to Trader Joe's recently and I found some new items and things I wanted to try.
 These quick cook gluten free mini elbows will be perfect for a quick mac and cheese.
 I was torn between the avocado hummus and the Buffalo style hummus but Buffalo won this time. It's got a kick to it.
 For when I'm feeling lazy!
 I've wanted to try their onion salt so I picked one up on this trip.
 This was another spice that sounded interesting and I had to give it a try.
Now I've got a whole shelf of TJ's spice blends.
 The Mochi Rice Nuggets are so good!! They remind me a cross between a Frito and a Cheetoh but not cheesy, if that makes sense.
 I tried these at book club a few months ago and they are soooo good!

April's Goodie Box

{Recipe} Quinoa, Chickpea & Cauliflower Salad

This was a salad I concocted in my brain and it turned out pretty darn tasty.  The ingredients are super simple and clean.
 Ingredients:
1 can chickpeas, rinsed and drained
1/2 cup cooked quinoa,  cooled
1 cup cooked riced cauliflower, cooled
1/2 cup cherry tomatoes, diced
juice of 1/2 lemon (or more)
1 TBS olive oil (optional)
salt & pepper to taste
 To make: (2-4 servings)
  • Mix chickpeas, quinoa, cauliflower and tomatoes in a large bowl
  • Add lemon juice, olive oil (optional) and stir to combine, adding more if necessary
  • Season with salt & pepper to taste

Serve immediately and store leftovers in the fridge.  Enjoy!
