Birthday In a Box - Take 2

I made my first Birthday in a Box two years ago for College Girl.

Now, my niece is away at a college so I put together one for her.

I checked out everything I had for her and tested it out in the box to make it would all fit.

The balloons were filled with cash and air and I wrapped up the gifts that wouldn't fit in balloons.

I popped a gift card into her birthday card and told her to make sure she popped all of the balloons. :)

It's such a fun way to send a gift!

{Recipe} P. F. Chang Style Cucumbers

I was looking for a way to spice up my cucumbers and remembered that I really loved P.F. Chang's Shanghai Cucumbers.  I found this recipe that replicates the taste of their zesty appetizer/side dish.

 They are really light and refreshing, gluten free and so easy to make. If you're in a cucumber rut, you might want to give these a try!

 Ingredients:

12 oz peeled and seeded cucumbers, cut into 1 inch chunks (I didn't seed mine)

3 TBS gluten free soy sauce ( I used Braggs Liquid Aminos)

1 tsp white vinegar

1/4 tsp sesame oil

1/2 tsp toasted sesame seeds (I didn't toast mine)

Mix soy sauce, vinegar and sesame oil together. Pour over cucumbers and mix well. Sprinkle sesame seeds over the top.

Chinese New Year

We were so lucky to be invited to our first Chinese New Year Celebration this year.

2015 is the year of the goat/sheep.

Our hostess and a friend.

I wore my "new" jacket.

There was so much food.

This was a dessert made with Asian pears and white wood ear mushrooms called yin-er (silver ear).

Our hostess really went all out with the food choices.

Some of the dishes were:

Stir fried eggs and tomatoes

Pork and Noodles

Tofu and Veggies

Eggplant

Lamb

Turkey Noodle Soup

Spring Rolls

I wish I could remember all of the dishes!

Making everything herself!

It was such a fun evening and we were honored to be a part of it.
