We were craving some stew, minus the beef and this recipe hit the spot!
Ingredients:
(Makes 4 servings)
1 yellow onion, diced
2 cloves garlic, minced
1 cup baby carrots (or 4 large carrots, sliced)
1 pound of potatoes cubed (peel if you like)
4 cups vegetable broth
2 TBS balsamic vinegar
1 tsp ground thyme
Salt & Pepper to taste
Scallions, chopped (optional)
To make:
- Heat up some water (or olive oil) in a Dutch oven and add diced onions and minced garlic
- Cook for 4-5 minutes until onions are tender
- Add carrots and potatoes to pot and place lid on top
- Cook for 5-10 minutes as vegetables begin to soften
- Add remaining ingredients and place lid on top. Simmer until vegetables are fork tender
- Taste and adjust seasonings if needed
- If you want thicker stew, you can puree some of the soup in a blender and add back to the pot
- Serve and Enjoy!

YUM... it has been cold here, so stew would be great.
Good one. IU have a vegetarian who is very hard to cook for. Might give this a go.

Heather, I love this easy recipe for no beef stew. This is the perfect weeknight meal and great for these cold days were are having right now. I will have to give this one a try.
