Birthday Festivities 2023

I had a few birthday festivities this year.  
I started off with selfie at a hotel...can't pass up a great mirror!
We stopped in at a wine bar for a snack before meeting up with the family for dinner.

We had tickets to Stevie Nicks and I was feeling my outfit(just imagine Gypsy playing as I twirl!). ;)
We got to meet up with the family for a nice dinner.
It was such an amazing show and experience.
Stevie's voice is even better live and she's still got it (and then some!). I was in awe!
The next morning I was sporting my new Stevie Nicks concert tee.
We went out for a lovely breakfast and took a long walk before heading home.
Willow surprised me with this cute kitty birthday card.
I got my free birthday drink from Starbucks...pumpkin spice of course.
We drove to the beach to have my actual birthday dinner.
A quick selfie before dinner. It was a great birthday...with one more fun activity to come....

{Recipe} Easy Oatmeal Jam Bars

 I hope these are your jam too!

I found this recipe and knew it would be a good way to use up some items that were just wasting away in my pantry (not in Margaritaville!). They happen to be vegan, are so easy and only take a few ingredients that I usually have on hand. Plus, they are delicious as a snack, dessert or breakfast treat.


Ingredients:
1 1/4 cups quick oats (must be quick oats, if you only have rolled oats, pulse a few times in a food processor)
1 1/4 cups flour 
1/2 tsp baking powder
1/4 tsp salt
2/3 cup coconut oil, melted
1/4 cup maple syrup
2 tsp pure vanilla extract
10 oz jam (I used a variety of flavors but you can stick to just one if you like)
1/4 cup shredded coconut


  • Preheat oven to 350ºF. Grease an 8 x 8 inch baking dish. Set aside.
  • Stir together quick oats, flour, baking powder and salt in a large bowl.
  • Add in melted coconut oil, maple syrup and vanilla. Stir to combine. Reserve 3/4 of mixture for the topping.
  • Press remaining mixture into prepared pan (make sure to really press it down with your fingers so that the bars will be less crumbly when you cut them), spread jam over the top within 1/2 inch of the edge. 
  • Add the shredded coconut to the reserved topping and sprinkle over the jam layer, pressing down gently to get the topping to stick to the jam.
  • Bake for 25 minutes or until the edges are golden brown.

  • Cool in the pan on a wire rack.
  • Cut into 16 squares (or however many you want).
Enjoy with a cup of tea or coffee.  These (not too)sweet bars were a big hit with everyone I shared them with.

{Field Trip} Ringing Rocks Park

 We had a free weekend and checked something off that we've been wanting to try out.


We made a visit to Ringing Rocks Park in Upper Black Eddy, Pennsylvania.  It's a boulder field in a 123-acre park.

We wanted to hear those ringing rocks for ourselves. You have to remember to bring your own hammer to make the rocks ring like a bell.  A few people had metal wrenches and they seemed to work too.

There were little indents in some of the rocks from being hit so many times. That's where the good sounds were!

It was a little harder to walk around on those rocks that we expected. 
After we were done ringing the rocks, we walked through the park to find Bucks County's largest waterfall....but we hadn't had enough rain and it was dry.  Some people were having fun running across it.

Thanks to Tiktok, we made a stop at Homestead General Store.
It was a cute little store and cafe.
We grabbed some coffee and walked on a path running along a canal behind the store.
It was a perfect fall day.
We also checked out this sweet free library before we left.

Anniversary Weekend-Dinner in Philly & Hamilton in NYC+Winery Gig!!

We had a busy anniversary weekend this year!
 Mr. Click had a gig on the actual day so we went out to dinner the night before.
We went into Philly for dinner and walked around a bit then stopped in for a drink first.

We had been wanting to try Suraya for awhile and finally did. We did the tasting menu and it was all delicious! I'm still dreaming about the warm pita!
The next morning I was on the train and headed for NYC.  I won the ticket lottery for Hamilton!!   I've won it once before and that was four years ago. This time City Girl 2 got to go with me.
We met up for brunch at Dolly Varden. It was a cute spot and the brunch was yummy!
The tickets were for the matinee show which was perfect.
Hamilton is still amazing and mind blowing. Our seats were front row, center and we had to ask the usher twice because we could not believe it.
Our backs are touching the stage here at our seats!!!
At intermission we got to peek into the orchestra pit.  That was really cool!
After the show I walked back to Penn Station through Times Square-not my favorite way to get through the city-but I made it with no issues.
The next day Mr. Click's had a gig at a winery. I thought it was going to be hot but they had lots of tables in the shade.
It was a beautiful place and a great way to end our weekend.  What are you up to this weekend?
