{Recipe} Amazing 3 Ingredient Vegan Chocolate Mousse

I made this ridiculously easy chocolate mousse for myWhere'd You Go Bernadette book club last month.  It's rich, creamy and dare I say luscious?  The ladies loved it and wanted the recipe so I think they enjoyed every rich spoonful of it.
 To make the mousse you only need three ingredients: full fat coconut milk, cocoa powder and confectioners' 10x sugar. Bam! That's it!!
Start by chilling the coconut milk in the fridge. I also chilled my mixing bowl and whisk attachment.
 

When everything is nice and cold, open the can of coconut milk and scoop out just the solid creamy part of the milk into your cold mixing bowl, leaving any liquid in the can.  I didn't have quite enough with one can of milk (for 6 servings) so I added an almost full carton of culinary coconut milk that I had in the fridge.  So if you're making this for more than 2-3 people, double the amount of coconut milk.
 Start whipping up the coconut cream in your mixer. It should get thick and creamy fairly quickly. Add 2 TBS of sugar (or more to taste) and continue whipping for a minute or two.
 Add 3TBS of cocoa powder (I used dark chocolate) and whip to combine.  You're done!
I put mine in little clear cups and added crushed Oreos for the mudslide look (from the book) and then refrigerated them until serving. It's extremely rich so a little goes a long way!
Of course I also added these little signs on bamboo skewers(another nod to the book) when I served them.

Birthday Dinner in Philly

We got to try a new restaurant in Philly for my birthday this year. See how excited I was to get out on a weeknight?
 I was also excited about trying out this place.  We tried to go there before but it snowed and we couldn't make it down to the city.
 This is how they serve their still water.  The bottles are stuffed with mint. So fancy!
The cocktail menu was kind of confusing so I ordered a seasonal cider punch. It looks like lady is in my drink.
 We ordered a bunch of different items to share. This is the potato croquettes with chipotle aoli, thei own ricotta & zucchini 'crab cake' sliders with homemade chips.
 This is the vegan ricotta with agave, black peppercorn and olive oil. It came out warm to spread on grilled sourdough bread. The entire menu is vegan!

 Buccatini and 'meatballs'(fra diavlo & basil), potato gnocchi(English pea, cipollini onion&smoked tomato butter) and Korean style fried tofu(spicy glaze, black sesame&garden pickles).

 Those 'meatballs'...yummo!
 For dessert we ordered Meyer lemon cake with huckleberry pudding and spiced meringue and
 Brown sugar apple empanada with salted caramel and vanilla bean ice cream.
Making a wish.  Everything was amazingly delicious!

 A quick shot of the Philly street and then we headed home.

[Get Thrifty} Thursday 11.03.16 Espresso Yourself

 I was pretty stoked to find this Maxim espresso/cappuccino maker at the Goodwill last week. Before I made the commitment to buy it though (look at that whopping price tag!) I checked online to see how to use it and if it had all of its parts.  I brought it home and cleaned it up...and....
We have cappuccino!  Cheers to the Chicago Cubs on their historic World Series win!!

{Shopping} Dollar Tree Finds

I've been watching the You Tube organizational expert, Kathryn on her channel called Do It On a Dime for awhile now and I love her tips and tricks.  She inspired me to organize my junk drawers with drawer organizers from the Dollar Tree and I've been on an organizing kick ever since.
She recommended some of her Must Have Dollar Tree Kitchen Items in one of her videos and I was thrilled to find a few of them at my local Dollar Tree.  In the back of the photo are two cupcake carriers. They nest inside each other with the lids so they take up very little space in your cabinets. They hold 9 cupcakes each so I picked up two of them. I have a huge Tupperware cupcake carrier but it takes up so much room, I had to move it out to the garage.  In the front are two handy kitchen helpers, one is a silicone brush and the other is a two sided spatula, both from the Betty Crocker line. I've used the spatula pretty much every day since I got it. It's great for mixing and also for scraping that last bit of food from the pan or jar.  I love it for the Vitamix! I haven't used the brush yet but she says it's great for basting. The succulents were another blogger's idea.   Paige Rose from The Quaint Sanctuary  tipped me off to Dollar Tree succulents in one of her posts (I can't find it now).  How cute are these little guys?   They come in their own pots but you can pull them out and put them in your own containers or keep them as is.  I've been on the look out and finally saw them on my last DT visit. They are adding a little color to our newly painted family room built-ins.
