{Recipe}Zucchini Cakes

 I made these for dinner the other night after pinning them-and dreaming about them.

They sounded delicious- with parmesan, panko and paprika (the three P's!)
The recipe is nice and easy.  The hardest part is grating the zucchini but it's 'grate' for getting out your frustrations (who me?).  
After it's all grated, squeeze all the excess liquid out and then add all the ingredients together .
Form into patties and heat up some olive oil.
Fry the patties until golden brown.
Flipping once (or twice) until they are the right golden brown for you.
The recipe said to enjoy with ranch dressing but we liked them just plain on a plate.
I should have doubled the recipe, we gobbled them up!

O perfect! I have a few zucc's I need to use up today. What did we do before panko? I love the way it stays crispy without having to cook the snuff out of things.

I'd bust out my food processor attachment for the grating. I always grate my knuckle when I do it by hand. LOL

It's lunchtime & I'm so hungry I could eat these right now! They look like the perfect snack.

Sometimes, my wife uses panko when she makes oven-fried chicken...all the taste, look & feel of fried chicken without the oil (I think she uses a little Pam olive oil spray).
