{Recipe} Vegan Sushi

I shared this photo of our first sushi making experience that happened during Winter Storm Jonas. We were pretty impressed with ourselves!
If you're nervous about sushi making, starting with vegetarian might be the way to go. You won't have any raw fish worries and will still end up with delicious sushi.   Start by making the sushi rice. We used this recipe.  While your sushi rice is cooking, assemble your ingredients.
For our sushi we used cucumber, avocado, shredded carrots, unsalted peanuts and sweet potatoes (I boiled them and cut them into sticks).
You also need nori(seaweed) sheets.  We used one package of nori.  A bamboo rolling mat and wooden paddle are also helpful but not mandatory.  I found mine at the grocery store.  When the sushi rice starts cooling down it gets sticky and you can start making your sushi.  Spread some rice on a sheet of nori.

We sprinkled some black sesame seeds on some of our rolls.
Then start adding your fillings.  We followed this tutorial for filling and rolling our sushi (they also show you how to make sushi without a mat).  Keep a bowl of water nearby. It helps to wet your fingers to spread the sticky rice and you'll also need it to close up the sushi when you roll it up.
Slice the sushi roll up into bite sized pieces. Marvel at your creations!  You can also add sesame seeds to the cut up pieces of sushi for a pretty garnish if you like.
Serve with pickled ginger, wasabi paste and soy sauce.  They might not look perfect but they tasted really good.   Amaze yourself! It's really easy so give it a try.

Ok, this is awesome! My sister loves sushi - if we are going out to eat, that's what she wants, haha. Whenever we go I always get the vegetarian sushi and love it. We'll have to have a "sister night" and try this as she already has a sushi kit at her house that she got as a gift. :)
