HAMILTON on Broadway!

"I am the A-L-E-X-A-N-D-E-R we are meant to be!"  If you know what this song is and have it constantly playing on repeat in your head like I do, you're a HamFan like me.
So I was in shock when I got this text!
 I have been trying for years to win Hamilton tickets.  You actually win the chance to buy them at $10/ticket which is AMAZING! We saw Hamilton during this Chicago trip but City Girl wasn't with us so I called her and asked if she was free on Sunday to meet me for the show. She was, it was awesome!

 I took the train to NYC on Sunday morning. It was chilly and blustery out but who cares, I was going to see HAMILTON!

 I was here (the room where it happened) finally and there were two really long lines but I didn't have to get in them, I could go right to the box office to pick up our tickets BUT I had to have my guest with me.  I was texting her to please get there ASAP, she was on her way!!!   By the time she arrived, it was time for the lottery winners to get in our own (short) line and we were ushered in to pick up our tickets if we hadn't gotten them yet, then ushered to our seats.  Everyone working at the theatre kept congratulating us. It was so cool!

 Time for a quick selfie and then it was time to watch the incredible show. Seeing it again and up close made me love it even more.
We had dinner at Bareburger after the show, it never disappoints!!
Good night New York City (in New York you can be a new man)!!  My heart is full!

{Recipe} Crock Pot Scoopable Fruit Pie


I found the idea for this pie at Hungry Girl and followed her recipe for Healthy Scoopable Apple Pie the first time I made it.  I wanted to try it with other fruit to see if and how it would turn out.  It did!
The recipe cooks in the crock pot so it's a real fix it and forget it kind of treat.
 Ingredients:
8 cups fruit (I used frozen peaches, blueberries and a tropical blend)
2 TBS corn starch
3 TBS Truvia sweetener (I used 4 packets of Zing natural sweetener)
2 tsp lemon juice
1 1/2 tsp cinnamon
1 tsp vanilla
1/4 tsp nutmeg
1/4 tsp salt
Optional: Whipped topping of your choice
 To make:
  • Place fruit in crock pot sprayed with non stick spray.
  • In a medium bowl combine cornstarch with 3/4 cup water, whisk to dissolve.  Add all remaining ingredients and whisk well.
  • Pour cornstarch mix over the fruit and stir.
  • Cook 1 1/2 hours (if not using frozen fruit). I cooked mine for about 3 hours until fruit is soft and liquid has thickened. * (Mine did not get super thick so you made need more cornstarch/less liquid)

 Pour into individual jars or containers.  Serve with whipped topping. I like the Reddi Whip Almond milk whipped topping. This would also be good poured over pancakes, oatmeal or ice cream. I put mine in the fridge and enjoy them cold.
It's a sweet treat that's guilt free!

{Entertaining} Our Holiday Open House

We hosted a holiday open house this year and it was a lot of fun, a little less stressful than the Graduation Party and a perfect way to see everyone over the holidays.
 First off, I have to mention this beautiful vegan charcuterie board that College Girl put together for us.   She was definitely inspired and made two of them for the party.  This one had Trader Joe's stuffed grape leaves, TJ's crispbread crackers, hummus with pine nuts and pumpkin seeds, grapes, carrots, mini bell peppers, pistachios, roasted red peppers, almonds, dried fruit & dates rolled in coconut.
 I picked up some red and white flowers with a mix of evergreens and berries.and made lots of arrangements.  They lasted SO long!
 Here's the crate I bought on one of my thrifting trips.  I added red carnations, some greens and flameless tea lights.
 City Girl made a fabulous sangria that had red wine, orange liqueur, orange juice, seltzer and lots of apples, pears, cranberries, oranges and pomegranate seeds.  It was a hit!
 She made most of it the night before and added the seltzer on the day of the party.  The fruit was quite potent and yummy!
This was the bar set up in our den.
 On the porch I had a mix of real and flameless candles.
 The house was all set up for our guests (I didn't get many photos after our friends and families started arriving).
 The food table in the dining room started to fill up with lots of goodies.
 This was charcuterie board number two, this one had apples, grapes, nuts, pumpkin butter, grapefruit preserves, fig preserves, spicy mustard, crackers, cheeses and grapefruit slices.
 We set up all of the food in the dining room to keep the kitchen a little more clear (it's still becomes the hub of the party!)
We had so many desserts (not all pictured here) and treats from guest at the party. It was a fun night and hopefully will become an annual tradition!

Loving Lately

Here are some of my favorite things lately,....
Someone gave us this candle at our open house party and I love it so much! It smells like my favorite Anthropologie candle.
I snapped this to send to College Girl. It was the only carry cup that I could use my new glass straws in (I've since bought a new age appropriate one that works as well).

{Travel} Holiday Weekend in Jim Thorpe, PA - Part 2

This is the second and last part of our holiday getaway to Jim Thorpe, PA.
After the Santa train ride we walked around the town and up to the Asa Packer Mansion.
This was the home of the philanthropist, train magnet and founder of Lehigh University, Asa Packer. #noslouch
The mansion looks out onto the town of Jim Thorpe.
Next door to the mansion is the Harry Packer Mansion Inn.
It is said that the design of this house inspired Disney's Haunted Mansion and I agree that it reminds me of it.





The town also has March Chunk Opera House (the town was previously called Mauch Chunk before it was renamed for Olympic athlete Jim Thorpe).


We stopped back in at Muggle Mug for some coffee.

You can't see it in the photo but it did flurry a little bit on this day.
We had lunch at the Broadway Grille.
We shared this amazing appetizer of carmelized Brussels sprouts and butternut squash.
We went in most of the shops in town and visited my favorite one called Somersault Press.    They create and print beautiful stationery and invitations. I stocked up on their hilarious cards while I was there.
We stopped in at Big Creek Vineyard and Winery for a wine tasting.
It was the perfect spot to get warm and take a break on a cold day.
That night we had dinner at Bonnie & Clyde Pub and Grille.
In the morning we took a quick drive back through town.
We followed the signs to a scenic overlook and stopped for breakfast at the Bagel Bunch--it was such a great little breakfast and lunch spot. I would definitely go there again.
We also stopped at Country Junction on our way home.  It's the world's largest general store apparently and the place is huge.   I feel like it's expanded since the last time we were there.
It's definitely a fun place to poke around.  You never know what you're going to find!
