Birthday Weekend and Happenings

Sorry I've been MIA for a few days and haven't been able to blog but I'm back and ready to share my birthday weekend happenings from last weekend.
 They started with some flowers from Mr. Click-I love the fall colors!
This made my mom heart explode to see my girls together in Dublin and having fun.  It was the perfect birthday gift!
 Onto the celebrations...
 We headed into the city for the evening.
 First  stop was dinner at Bar Bombon (a vegan Latin tapas restaurant) and I had their Puerto Rican punch of the day. Everything was delicious and hard to believe it was all vegan. The Spanish meatballs in romensco were fabulous!   We had some time after dinner and did a little shopping and walking around. I used my birthday coupon at Anthropologie!
We walked about 10 blocks (gotta burn off all of that good food!) and  arrived at the Walnut Street Theatre to see Irving Berlin's Holiday Inn,
 I love the movie Holiday Inn so I was excited to see what the musical was all about. The hubs had never seen it so it was all new to him.
 It may sound strange that they were running a holiday show in early October but the show isn't just about the winter holidays and takes us through an entire year.
 There were lots of familiar songs and the staging, cast and costumes (so many costume changes!!) were spectacular!

The fun didn't end there and we went to see A Star Is Born on Saturday night. It was amazing. Who knew Bradley Cooper could sing and he also directed the movie. I see Oscars in their future!!
 The humidity was taking a toll on my hair and I was so ready for a cut and color!
 Soooo much better!
I got a new 'toy' for my birthday and it's a beaut! I'm still getting used to it and that's why I didn't get much blogging done last week.
I ended my birthday weekend with a beautiful restorative Ganesh yoga workshop. Bliss!

First College Care Package

 I think my love language is care packages. I've missed sending college care packages since City Girl graduated but I'm back at it with College Girl.
 She's studying abroad so it's a lot more expensive to ship things to her but it is her birthday month so we made a special one up for her.
 I knew she needed a few things like a travel coffee mug and slippers--the other things I added for fun.
Here's what we put into her box. I rolled the socks up into her slippers and put the peanut butter in the mug, then wrapped that up really well. I put the instant coffee sticks in her travel mug.   We also added two pairs of gloves after she told us how cold it had gotten.
I put some fun wrapping paper on the flaps of the box and packed it all up with her card on top. She had a hand written card from my niece too. I squeezed in as much as I possibly could, it was almost bursting!  It all arrived safely and she loved it!

{Recipe} Testing out the TJ's Eggplant Hummus Copycat

Trader Joe's Eggplant Hummus has a cult following but you can't get it everywhere. 
I was able to find and try it on our trip to Austin but my store doesn't carry it.  I found a copycat recipe and it is so good!  There's a video that accompanies the recipe and it's worth watching to see how she makes it.

You start by scoring and roasting an eggplant. You'll only need a half cup of eggplant so you can save the rest of it for another recipe. In the last 15 minutes of the roasting time add 6 cloves of garlic to the baking sheet and roast that too.
Here are the other ingredients that you need.   Baking powder sounds strange but it makes the hummus airy and fluffy.
Add everything but the pomegranate juice to a food processor or high speed blender.  Set aside.
Heat 1/4 cup of pomegranate juice on the stove, bring to a boil then reduce heat to simmer until most of the liquid has evaporated.

When it's done cooking down, there should be about 1/2 TBS of reduced liquid left.  Add this to the food processor and pulse until smooth.
Looking good!
You could stop and be done right here or...
Add this last step of mixing the hummus up with a hand mixer.
It makes it even more light and fluffy!
Store in an airtight container in the fridge.  It makes twice as much hummus as the package from TJ's.  I don't notice the eggplant flavor very much so even if you're not an eggplant fan, you'll probably like this hummus.
She had some ideas for the extra pomegranate juice too. Make a seltzer and pom mocktail.

More Fall Trader Joe's Finds

I hadn't been to Trader Joe's since my EPIC Trader Joe's visit in Austin, Texas and I wanted needed to see what my local store had that was new and seasonal.
They keep coming up with new seasonal bakery items and it makes me wish I was hosting a fall party.
Everything looks so good.
Apple cider donuts seem to be very popular here.
I've seen their Kringle around the holidays but hadn't seen the Pumpkin Caramel Kringle.
Cute fall shaped chocolates!
Two seasonal candle scents, Honey Crisp Apple (I got this one) and Vanilla Pumpkin in these cute tins.
I am a big fan of mug cakes and this one sounds amazing.
These tortilla chips sound very interesting!
Canned butternut squash for soups and other recipes.
Pumpkin spice almond beverage to make vegan lattes.
This salsa with those chips would be a great combo.
I had never seen frozen spaghetti squash before and this one has butternut squash chunks along with a seasonal tomato sauce.
This granola would be so good on some yogurt or a smoothie.
Hold the Cone minis are the perfect size for a little ice cream snack and now they come in Pumpkin Ginger flavor too?!
This vegetarian Harvest Chili was in the refrigerated section and would make a quick lunch or dinner.
I tried this Mango Kombucha and I really liked the flavor!
I also picked up some of these mini Villagio Marzano Tomatoes (Heavenly).  Yummy!
Speaking of yummy, I picked up some of their Vegan Cream Cheese. It's creamy and delicious. I tried it on a toasted Everything Bagel Thin with some of those sliced Villagio tomatoes and some Everything But The Bagel Seasoning sprinkled on top.
Finally I picked up this frozen Soycutash blend of edamame, corn and red peppers.  What have you found at TJ's lately?
