I posted this photo of some minestrone soup that I made but didn't have a recipe to share. I made it again last week but switched up the ingredients based on what we had and realized it's really a mix and match soup and easily adaptable to your tastes.
Mix & Match Minestrone:
Chop 2-3 cups of "hard" veggies (I like onions, celery & carrots. Bell peppers and green beans would work well too.)
Saute veggies in olive oil in a large pot for 5-10 minutes. Add a few cloves of minced garlic if you like.
1-2 cans of beans of your choice (rinsed and drained)
1-2 cans of tomatoes (diced, crushed, whole, mashed up)
1-2 TBS tomato paste (optional)
1/2 - 1 cup dried pasta (you could add rice instead)
4 cups broth (I use veggie)
1-2 cups water (depending on how much pasta you have added)
Seasonings: 1-2 tsp of oregano, rosemary, basil or Italian seasoning, 1 bay leaf, salt & pepper,
dash of crushed red pepper or hot sauce
Stir to combine ingredients. Bring to a boil then turn the heat down and simmer until pasta is done.
Add in "soft" veggies like chopped zucchini and spinach. (You could add frozen corn or peas here too).
Simmer until veggies are cooked.
Top with parmesan (or any other cheese, or not).
