{Recipe}Vegan Chocolate Mint Truffle Pie

This was one of my Thanksgiving picks to make and try over the weekend and boy, was it good!
 The original recipe is here and I modified it by using Candy Cane Joe Joe's.
Ingredients:
28 sandwich cookies (any variety)
1/4 cup melted butter (I used vegan Earth Balance)
1 14 oz can of light coconut milk
12 ounce bag of chocolate chips
 Preheat oven to 350 F.  Crush the cookies in a food processor until crumbly, pour in melted butter and pulse to combine.  Spread crumb mixture into an oven safe dish and bake for 5 minutes.  Let cool.
Melt chocolate on stove top (or microwave) until smooth and completely melted.  Combine coconut milk and melted chocolate immediate in blender or food processor and blend until completely smooth.
 Pour filling into crust and refrigerate 4 hours or overnight.  
 When ready to serve, garnish with more cookies and 
some whipped topping (we used Soyatoo Soy Whipped Topping). 
This pie is creamy and decadent (and so easy!).  
 Vegans and non-Vegans loved it!

I really like that you did the crust with peppermint Jo-Jos. I was trying to convince AJ to buy them this weekend, but he seemed to think because his coworker was handing out her famous cookie boxes (gigantic boxes of homemade cookies) + we are having a cookie swap that we didn't "need" more cookies in the house. Craziness!
