{Recipe} Asian Cucumber & Carrot Salad

I was looking for a recipe that combined carrots and cucumbers and found this one on Pinterest (where else?)
Ingredients:
1 large English cucumber
2 medium carrots
2 TBS rice vinegar
1 TBS apple cider vinegar
1 tsp water
1/2 tsp sugar(I omitted this)
1/2 tsp sesame oil
1TBS sesame seeds
Use a julienne peeler to make long strips of the carrots and cucumber. Combine the strips in a bowl.
In another bowl mix up the remaining ingredients (except the sesame seeds) to make the dressing.
Pour dressing over vegetables and combine. Refrigerate until serving and garnish with sesame seeds.
This keeps really well in the fridge for a few days (if it lasts that long).

Let's Keep in Touch!

This sounds delicious and different! My kids get tired of the same ol school lunches so this is a great idea! Thank you!
