This recipe will make your whole house smell pumpkin-y and amazing and oh so fall-like. I whipped up a batch on my birthday for a friend. It makes two loaves, so you can share. Did you know there was a canned pumpkin shortage? I was having the hardest time finding any plain old canned pumpkin so I googled it. It seems to be over now, so go out, stock up and enjoy!

Recipe:
2/3 cup shortening
2 2/3 cups sugar
4 eggs
1 can (15 oz) plain pumpkin (not pumpkin pie filling)
2/3 cup water
3 1/3 cups all purpose flower
2 tsp baking soda
1 1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1 tsp ground cloves
2/3 cup coarsely chopped nuts (walnuts or almonds are good)
2/3 cup raisins (I like to use golden)
Heat oven to 350F. Grease two 9x5x3 loaf pans. In large bowl, cream shortening and sugar until fluffy. Stir in eggs, pumpkin and water. Blend in flour, soda, salt, baking powder, cinnamon and cloves. Stir in nuts and raisins (you may add some chocolate chips now also if you like).
Pour into pans. Bake about 70 minutes or until toothpick inserted in center comes out clean.

I could only find organic pumpkin at trader joes...
This would be delicious with maple butter. I noticed that on the pumpkin lately. I"m going to try Trader Joes and see if they have any on hand. There's is usually pretty economical.
And I heard there is also a peanut butter shortage on the way, too!
