{Recipe} Vegan Taco Pie

8-10 corn tortillas
1 pkg Beef-less Ground crumbles or equivalent (I use Trader Joe's brand)
1 14.5 oz can diced tomatoes
1/2 medium onion, chopped
1 cup frozen corn
1/2-3/4 cup vegan cheese shreds (like Daiya)*I used a mix of cheddar and mozzarella.
1/2-1 tsp chili powder-depending how spicy you like it
salt & pepper to taste
 To make:
  • Preheat oven to 350F
  • Heat non-stick skillet to medium and saut√© onions with some water until translucent.  
  • Add Beef-less Ground and corn, heat to warm through, adding more water if mixture starts to stick to the pan.
  • Add tomatoes and spices, stirring to combine and heat through. Set mixture aside.
To assemble:
  • Spray 9x9 baking dish with non stick spray or use parchment paper.  
  • Put 4-5 tortillas in bottom of dish, ripping and overlapping to cover the bottom. 
  • Add half of the taco mixture then add half of the vegan cheese. 
  • Repeat with remaining tortillas, taco mix and cheese.
  • Bake at 350F for 25-30 minutes until cheese is bubbly.  You can put under the broiler for a few seconds to brown the top and make it crispy.

Serve with salsa, like this stuff and sour cream, vegan of course.  I'll post my Creamy Cannellini Bean Sour Cream Recipe tomorrow.  It's a good one!
