{Recipe}Roasted Red Pepper Rigatoni

I found this recipe when I was at the dentist's office reading a Rachael Ray magazine and it looked easy and different--bread cubes and sunflower seeds in a pasta sauce? Let's try it!
 I snapped a photo of the dish and the recipe with my phone (I no longer have to rip pages out of magazines at medical offices=my former life of crime!)
 I knew I could easily veganize this by subbing vegan Parmesan cheese for the garnish or leaving it out altogether.  I also left out the EVOO (Extra Virgin Olive Oil) but I did use some of the liquid from the jar that the peppers came in.   There is one typo in the recipe that says to puree sesame seeds with the peppers, etc... but I went with the sunflower seeds since they are in the name of the actual dish.
I love an easy, no-cook sauce! It was creamy, hearty and tasty!

You cracked me up about "life of crime". So you are the reason pages are missing in magazines at the Doctor office, beauty shop and etc. LOL!
