{Recipe} Peanut Butter Cup Energy Balls

 I was looking for a healthy sweet treat and I had all of the ingredients on hand for these Peanut Butter Cup Energy Balls. Score!
1 cup pitted dates, soak for 10 minutes if dry and drain well
3 TBS natural peanut butter
1/4 cup dairy free chocolate chips
1 TBS chia seeds
2/3 cups rolled oats
To make:
Pulse dates in food processor until small pieces.  Add peanut butter, chocolate chips, chia seeds and oats. Pulse until well combined.  Roll into balls and freeze for 15 minutes to firm up. Store in the fridge in an air tight container.
