{Recipe} Savory Ginger "Beef"

This recipe is a super easy way to get the taste of Chinese take out ginger beef without the beef! 
 The secret is vital wheat gluten (I buy this brand). 
Vital wheat gluten is the protein found in wheat and makes a meat replacement called seitan. Making my own "meat" was so much better than the purchased seitan that I've tried.
Ingredients: 
(2-4 adult servings)
1 cup vital wheat gluten
4 TBS nutritional yeast
1/2 tsp salt
1/2 tsp garlic powder
1 tsp ground ginger
6 TBS water
1 TBS apple cider vinegar
4 TBS ketchup
2 TBS oil
1 green bell pepper. sliced
2/3 cup vegan hoisin sauce (or similar)
1-2 TBS oil for frying
to garnish:
green onions 
sesame seeds
To make:
  • Whisk together vital wheat gluten, nutritional yeast, salt, garlic powder and ginger. Set aside.
  • In separate bowl whisk together water, apple cider vinegar, ketchup and oil.
  • Drizzle the wet ingredients over the dry ingredients and use your hands to form crumbles. Keep breaking up the larger crumbles until you have uniform pieces.
  • Heat oil in frying pan on medium high heat then add crumbles. Add green pepper slices.
  • Fry crumbles and peppers for about 8-10 minutes until crumbles are crispy and golden on all sides and peppers are lightly sautéed. 
  • Add sauce and fry another few minutes. Serve over rice or noodles.
  • Garnish with green onions and sesame seeds.
