{Recipe} Easy Veggie Soup

This was another one of those soups where I was trying to recreate a soup I'd had at a local cafe. It was all veggies and quite delicious.
Here's my version.  Feel free to use whatever vegetables you have available.
Easy Vegetable Soup
1 medium onion, diced
1 cup carrots, chopped
2 stalks celery, chopped
2 cloves garlic, chopped
1 cup small broccoli florets 
1 small zucchini, chopped
1 cup frozen corn
1 can, diced tomatoes
1-2 handfuls of kale
6 cups vegetable broth
salt & pepper to taste

  • Cook chopped onion and carrots in water to soften. Add garlic and cook a few more minutes, being careful not to let it get brown
  • Add remaining vegetables (except kale)
  • Add broth and bring to a low boil
  • Reduce heat, cover and simmer for about 20 minutes
  • Add kale and cook on low until kale wilts
  • Season with salt & pepper to taste, add any other seasonings you like
  • Enjoy!
