{Recipe}Sticky Sesame Cauliflower-Vegan & Oil Free

This is a recipe I tried from Connoisseurus Veg but I adapted it to make it oil free.  It's so good, tastes like Chinese take out without all of the grease! Sometimes I forget I'm eating cauliflower (and I love cauliflower!).

Sticky Sesame Cauliflower: Vegan & Oil Free

1 1/4 cups dairy free milk (I used almond milk)
1 cup whole wheat flour
1/2 tsp salt
1/2 tsp baking powder
1 large head of cauliflower, broken into florets
1/2 cup soy sauce (or liquid aminos)
1/2 cup maple syrup
1/4 cup rice vinegar
2 tsp fresh grated ginger (I used the paste)
2 cloves garlic, minced
1 tsp siracha
1 TBS corn starch
1/4 cup cold water
toasted sesame seeds

To make:
1) Preheat oven to 450F (this is a crucial step so make sure you do this!).  Line a baking sheet with parchment paper.
2) Combine milk,salt, flour and baking powder in a small bowl.  Dip cauliflower florets into the batter, shaking off excess.  Arrange in single layer on baking sheet.
3) Bake for 10 minutes in preheated oven.
4) While cauliflower cooks, combine soy sauce, maple syrup, rice vinegar, siracha, ginger and garlic in a small sauce pan.  Place over medium heat and bring to a simmer, allow to simmer for 10 minutes.  Combine corn starch and cold water in a small container(shaker jar works well) until corn starch has all dissolved.   Add to soy sauce mixture and stir to blend.  Remove from heat.
5) Remove cauliflower from oven and flip each piece over.  Return to oven and bake 5 -10 minutes more.
6) Remove from oven and pour sauce over florets.  Return to oven and bake 3-5 minutes more, just until sauce become sticky and coats florets.
7)Sprinkle with toasted sesame seeds to serve.  Optional scallions are nice too. This is delicious over rice!
