Spring Breakin'

This year the girls' spring breaks actually intersected for a few days.  It was a busy, whirlwind couple of days for sure!
 We started College Girl's spring break out with some (legal) drinks at a favorite local spot I've been wanting to take her to.
 One night, the girls and I went to Chipotle for dinner and then to see Cinderella. So good!
Their dad had been traveling for work and we had one day where we'd all be together and available-Saturday!  We went to Philly for lunch and tried out BareBurger (thanks for the great rec, Julie!)


What were two vegetarians, a vegan and a no-red-meat guy doing at a place known for their burgers?

Well, I had checked out their menu online and they actually had three different kinds of homemade veggie burgers (and turkey burgers for Mr. Click).
They offered us their new brunch menu when we arrived, but we all wanted to try their burgers!
I loved the funky decor.
And these fries!
 This was the "sharing" size and it came with two dipping sauces.

This was the hubby's turkey burger. You can customize them any way you like, there were lots of different toppings and bun options to choose from.....and homemade pickles!

 I was having trouble deciding so I chose one of their menu items called The Farmstead. It was a sweet potato and wild rice burger with cauliflower hummus, tomatoes and baby kale wrapped in collard greens.  Yes, you can get collard greens as one of the bun options.
 Did I mention the fries?
 After all of that food, some walking was in order so we walked down to Rittenhouse Square.
 It was a beautiful (but windy) day in the city.
It was nice to be out but also nice to just hang out at home.
There was an intense Mario Kart competition that night.
 Sunday was Easter and we had a nice, quiet family brunch.
I made Baked Carrot Cake Oatmeal again this year but kicked it up a notch with some coconut whipped "cream".
Miss High School made broiled grapefruit to go with it and it was so good.
 She also made these adorable coconut macaroon nests for Easter dinner.
 I made Best Skinny Eggplant Rollatini With Spinach to take to our Easter dinner at my mother in law's house.
I think it turned out pretty darn well!

Sadly, College Girl had to head back to school after brunch (she had classes the next day).
Obviously the Easter Bunny had been at my mother in law's house.

Rittenhouse! My sister and bro-in-law lived a block away for a few years, love that part of the city.

Will have to try that burger place when I'm in Philly!

Looks like a fabulous time was had by all! How wonderful that everyone could get together at the same time! BareBurger sounds like a great place -- we have a similar restaurant nearby, thank goodness since veggie burgers are hard to find around here! TX is definitely too beefy! I checked out the recipe for baked carrot cake oatmeal -- yum! I'll try it -- hubby doesn't like oatmeal fixed the regular way but I think he'd love this!

Bareburger sounds terrific! We have a Bad Daddy's Burger here but the only veggie dish right now is the Black Bean Burger. We have tried lots of different combinations! I might have to suggest that cool burger wrap you had to Bad Daddy's! Lovely phamily, great photo shares and thanks for joining the fun!

Looks like you had a fabulous Spring Break. And all those burgers looks absolutely a sidenote, I am on the second day of a cleanse so I really just wanted to totally lick my computer screen after seeing all the yummies. #sorrynotsorry

With meals like yours, I'd be happy to go without meat most of the time. They look and sound so yummylicious. I like the idea of wrapping collard greens around a burger, veggie or meat. Happy Day to ya.

Love the photo of your daughters. They are in the cycle of looking a lot alike again. Youngster is catching up in age, I think it's that turning into a young woman look. Whatever it's called it looks beautiful on them.
