{Recipe} Marinated Chickpea Salad

This is a recipe I've been making every week. It keeps really well in the fridge and keeps getting better as the flavors have time to meld together. It's great on its own or in a green salad or bowl.
2 cans of chickpeas, rinsed and drained
1/2 cup shredded carrots
1/2 small red onion, diced
1 bell pepper, diced
juice of half of a lemon
Balsamic Vinegar
Garlic Powder
Onion Powder
Italian Seasoning
Crushed Red Pepper
Salt & Pepper
 To make:
  • Rinse and drain chickpeas.

  • Add all salad ingredients into a bowl

    •  Squeeze fresh lemon into bowl.
    • Add balsamic vinegar (start with 2-3 TBS).
    • Add garlic powder, onion powder, Italian seasoning (about 1 tsp each).
    • Add pinch of crushed red pepper.  
    • Stir to combine. 
    • Season with salt & pepper to taste. Adjust any seasonings, adding more balsamic vinegar or lemon juice as needed.
    • Can be eaten immediately or refrigerated until ready to serve.
    • Store in airtight container in the fridge.
    It's even better the next day!

    Oh, this looks so good Heather. I love eating chickpea salad. I make one with tuna and red onion in it. I will have to try yours out. :)

    This looks lovely and healthy Heather. I have never tried chic peas other than in Hummus, which I love. I will have to try them like this in a salad :)
