I'm obsessed with this oatmeal combination. It takes a little extra time in the morning but it is so worth it. It's super filling and keeps me full for 5-6 hours-sometimes longer. It's full of fiber, healthy fats and protein.
Ingredients (per serving)
1/2 cup rolled oats (not instant)
2 cups water
1-2 TBS unsweetened cocoa powder
1 tsp coconut oil
1-2 tsp coconut sugar
toppings:
peanut butter
banana
cinnamon
maple syrup
To make:
- Add oats, water, coconut sugar and cocoa powder to pot. Stir to combine.
- Bring to a boil (watch closely) then reduce heat to low.
- Simmer on low and stir occasionally until oatmeal is desired consistency (about 15-20 minutes).
- Add coconut oil and stir until melted.
- Top with peanut butter, sliced bananas, maple syrup (for more sweetness) and cinnamon (all optional but highly recommended).
