{Recipe} Marinated Chopped Salad-Oil Free

Happy Tuesday! I hope everyone who celebrated Passover and Easter had good ones.  We're on Spring Break this week so my schedule is off but I plan on being around.  This is a quick marinated salad that I've been keeping in Mason jars in my fridge. It gets better with time. I've been having it as a side dish or mixed in with fresh salad. So good!
1 English cucumber, peeled and diced
1-2 cups grape tomatoes, cut in half
1-2 red or yellow bell peppers, diced
1 small red onion, diced
1 can cannellini beans, rinsed and drained
1/4 cup balsamic vinegar
juice of 1/2 lemon
salt & pepper
1 tsp Italian seasoning
To make:
  1. Add all chopped veggies and beans to a large bowl. Stir gently to combine.
  2. Add balsamic vinegar, start with 1/4 cup and add more if needed.  Squeeze the juice of 1/2 lemon over the bowl.
  3. Add 1 tsp of Italian seasoning add salt and pepper to taste.
  4. Stir and taste, adjust seasonings if necessary. Let sit for about an hour, stirring occasionally.
  5. Store in large Mason jars or airtight containers in the fridge.
  6. This can last up to a week.

YUM! I love using mason jars for lots of different things but love me a salad to go in a mason jar. Just read another friends post that does her snacks in the half pint mason jars. The ideas are endless with our fixings for these jars. Thanks for sharing. Hugs and blessings, Cindy
