Superbowl LII - Food & Fun

This year's Super Bowl was extra exciting because our home town team was in it! #towinit  

Go Birds! 

 I'm usually only all about the food and commercials during the big game but this year there was more on the line.  I did manage to make some game day winners.
 The night before I cooked up this Buffalo Chickpea Chili.  It was way too spicy so I added more chickpeas, tomatoes and extra corn to calm the spice down a bit. If I make it again, I'd start with 1-2 TBS of buffalo sauce.
 It was a fun twist on traditional chili and was even better the next day!
 I'd also been wanting to try something out of the Taco Cleanse cookbook that I got for Christmas.  These "fish" tacos made out of Iridescent Fried Tofu were mighty tasty.
 I baked my tofu to make it a bit healthier and the tofu pieces were very crispy and firm.
I made their Regenerative Onions but they weren't as big a hit...just ok. But the pink color was gorgeous!
The Taco Cleanse book has some great recipes but it's also a funny read. Check out their Instagram too.  I'm digging their food pyramid!
 What's a big game without wings? I made these Cauliflower Buffalo Wings and they were the best I've tried!  This was only half of the batch because I ran out of buffalo sauce and was waiting for another bottle of it.
Wings need ranch dressing, amiright? So I whipped some up with this recipe but subbed sunflower seeds for the cashews and tweeked the seasonings from another recipe which I cannot find now. #bloggerfail Basically I used dried dill, onion flakes, onion powder, garlic powder and parsley.
 The game was such a nail biter that we were watching it in different rooms of the house but I got to capture the joy in this guy when the game ended. Woo hoo! Tomorrow I'll have a post about the Eagles parade in Philly!

Love your pics of how you do superbowl. It was on the news here but we don't have family food days for sports here. It looks such fun.
