{Recipe} Vegan Stoner's Tater Tot Hot Dish

I'm really trying to get out of the dinner rut that I've been in lately.  I often find inspiration for new dishes already pinned to my Pinterest board and this was one of them that I pinned a LONG time ago.
 This recipe comes from The Vegan Stoner and you should definitely check it out if you like to cook cheap, fast and vegan. All of their recipes have adorable hand drawn illustrations and there's a photo of every finished dish.
 So what is a Tater Tot Hot Dish?  It starts with a base of crumbled and spiced up firm tofu combined with a few cups of frozen mixed vegetables.  Then it gets topped with a cheesy, creamy cauliflower sauce followed by....wait for it...tater tots!
 It's then baked for 40 minutes until the tater tots get toasty and golden brown. It was a winner!
Healthy-ish comfort food, perfect for one of these cold nights we've been having on repeat!

This looks amazing! Can you post a recipe for cauliflower sauce? I need some tricks to add more vegan meals. And, I agree I was in a recipe rut in January!
